Simple Gluten Free & Dairy Free Chocolate Cake

100g GF DF Margarine
2/3 cup of sugar
1/2 cup plant based milk (I used soy)
2 eggs
1/2 teaspoon Vanilla Essence
1 cup GF Self Raising Flour
2 tablespoons Cacao

Oven 180°C

Grease and Line 20cm x 20cm square pan.
Melt Margarine, add sugar and mix well.
Add Plant Based milk, eggs and vanilla essence mix again.
Add SR Flour and Cacao mix well and make sure the dry ingredients are combined.
Pour mix into the baking pan, bake for 30 to 35 mins. Insert a skewer into the centre of cake to make sure it.is cooked through.
Cool in pan for 10 minutes then turn onto a cake cooler.
Cut when cold. Store in an airtight container.

Cornflake Slice - Gluten Free & Dairy Free

200g GF DF Margarine
1/2 cup white sugar
1/2 cup sultanas
1 1/4 cups Plain Flour
1 teaspoon baling powder
1 cup shredded coconut
1 1/4 cups GF DF cornflakes

180° C

Grease and Line 20cm x 20cm square baking pan.

In a saucepan big enough for all ingredients : melt butter, golden syrup and sugar. Mix well.

Remove from heat and add the sultanas, coconut, flour and baking powder and cornflakes. Mix well till combined.

Press into the baking pan and bake for 20 to 25 mins or until golden brown.

Cool in pan. Slice when cold.

Rhubarb Cake - GF and DF

150g GF DF Margarine - softened
3 eggs - whisked with a fork
1 cup brown sugar
2 cups GF Plain Flour
1 tspn bicarb soda
2 tspn baking powder
1 tspn cinnamon
2 to 3 cups Rhubarb - sliced into 1cm pieces & cooked slightly to soften

Mix Margarine, eggs and brown sugar together.
Add dry ingredients and mix well to combine.
Grease and line a 20cm round pan.
Add mix to the pan then place rhubarb on top and gently press into the batter with a spoon. Sprinkle the top with 2 tablespoons of brown sugar.
Bake for 35 to 40 mins at 180°C
