A herd is only as healthy as the food it eats! We've worked with veterinarians to craft the perfect well balanced diet for our cattle. First and foremost, we only feed them the grasses and grains that are grown right here on our farm. 90% of their diet is compromised of corn and roughage while the last 10% is a blend of vitamins, nutrients and DDG's.⁠

An aerial view of our farm! Pictured is our grain storage facility and a few of our pastures. As stewards of our land, we do everything we can to promote sustainability. Solar energy panels are utilized to capture renewable energy from the sun and power our grain storage facility. When the facility is inactive, they return power back to the grid. This is just one of our many methods to decrease our carbon footprint. ⁠

Our cattle’s diet is comprised of a blend of home grown corn and a high ration of roughage (alfalfa hay and straw) plus some essential minerals for optimal nutrition. Ever wonder what your hamburger is made of? Most beef programs consider ground beef an easy way to reduce waste and maximize profits. Because of this, many companies generally use less desirable cuts resulting in a lower quality product.

At Black Hawk Farms, however, we only use whole muscles to create our grind. The result is a high quality product with an amazing depth of flavor unlike anything you could ever get from a large-scale producer.

Beef Bacon Steak 🥩🥓 Butter basting a whole slab of beef bacon is my idea of a good time. But it has its drawbacks. Thinly sliced bacon has a high surface area to bacon ratio, allowing for optimal crispness and rendering. The opposite is true when the bacon slab is left whole. While cooking this “steak” sous vide rendered the internal fat perfectly, nothing beats direct heat caramelization (like you get with sliced bacon). This is the same concept as to why I don’t mind the k**b of fat on a ribeye steak (high surface area exposed to heat), and why I’ve been experimenting with removing that same k**b of fat on a prime rib (low surface area). Grilled peaches, steak & blue cheese on a taco?! 🔥 Would you try these? . . Steak tacos w grilled peach salsa & blue cheese 🌮 . . American Wagyu inside skirt steak from Black Hawk Farms was seasoned with a mixture of “Fajitaish” & “Peruvianish” from Dizzy Pig Seasonings. Grilled on my Big Green Egg hot and fast for about 90 seconds a side. Rested for 10 minutes and sliced on my EndGrain USA cutting board! . . Flour tortillas were charred on my MiniMax. Added Bibb lettuce, steak, grilled peach salsa & blue cheese crumbles. . . 🍑 Peach Salsa 🍑 1 large grilled peach 1 teaspoon balsamic vinegar 1 teaspoon lime juice 1 teaspoon lime zest Handful of “ribboned” fresh basil Handful of diced red onion Salt and pepper to taste . . These were some of the best tacos I’ve had! The flavor mixture of the cheese with the steak with the onion was absolutely incredible. This American Wagyu Delmonico steak from Black Hawk Farms was seasoned with the new “Garlic” rub from Dizzy Pig Seasonings and reserve seared on my Big Green Egg MiniMax. Smoked at 250F with Barrel Proof - Smoke Your Bourbon chips until the internal reached 115F. Seared for about 1 minute each side until the IT reached about 122F. Rested for 15 minutes and sliced on my EndGrain USA walnut / maple cutting board! .
