🇬🇷 Fasolada – Traditional Greek Lent Bean Soup

One of the most beloved dishes in Greek homes during Orthodox Lent.
Simple ingredients, rich flavour, and a recipe passed down through generations.

A humble bowl of Fasolada reminds us that the most meaningful meals are often the simplest.
Perfect for fasting and perfect for sharing with family.

Καλή Σαρακοστή 🙏

🥣 Ingredients

• 1½ cups white beans (soaked overnight)
• 1 onion, chopped
• 2 carrots, sliced
• 2 celery stalks, chopped
• 2 cups crushed tomatoes
• ½ cup olive oil
• 1 bay leaf
• Salt & pepper to taste

🍲 Instructions
    1.    Boil the soaked beans in water for about 30 minutes, then drain.
    2.    In a pot, sauté onion in olive oil until soft.
    3.    Add carrots, celery, tomatoes and bay leaf.
    4.    Add the beans and cover with water.
    5.    Simmer for 45–60 minutes until beans are tender.
    6.    Season with salt and pepper and drizzle with a little extra olive oil before serving.

Serve with fresh bread, olives and lemon.🍋
