Lemon Burst Buttermilk Loaves

3 c. flour
1 tsp. baking powder
¼ tsp. salt
½ tsp. baking soda
1 c. butter
1¾ c. sugar or less
2 tsp. vanilla extract
4 eggs
¾ c. buttermilk
¼ c. fresh lemon juice
2 tbsp. lemon zest

Glaze (optional):

1½ c. icing sugar
1 tbsp. heavy cream
1½ tbsp. lemon zest (optional)
2 tbsp. lemon juice

Preheat oven to 350. Prepare 2 loaf pans with either cooking spray or butter and flour.

Sift all dry ingredients together in a bowl, set aside.

Add sugar and zest together, stirring until sugar is fragrant. Cream together with butter, add vanilla. Add eggs, 1 at a time, ensuring they fully incorporate. Combine lemon juice with buttermilk and add to batter, alternating with the flour. Evenly divide between pans and bake for 35 to 40 minutes, checking with tester to see if done.

While loaves are cooling, combine all of the glaze ingredients together to a pourable consistency – if you want it thinner, add more lemon juice. Drizzle over loaves, serve and enjoy. If you don’t glaze right away, you can freeze for up to 3 months.

Pepper Jelly

4 medium sized bell peppers - color of preference
8 hot peppers
1/2 c. apple cider vinegar
1/2 c. water
1 1/2 c. sugar
2 tbsp. No Sugar Added Pectin

Prepare jars accordingly - lids only if not using canner. Sterilize jars, boil lids and rings. Makes 6 200 ml jars with a bit extra in a 7th jar.

Remove stems and ribs from peppers. Finely chop or puree in food processor and add to deep saucepan. Do the same with hot peppers. Add vinegar and water to pan and bring to boil. While this is coming up to a boil, measure sugar into small bowl, removing 4 tbsp to a separate bowl, to this separate bowl, add 4 tbsp. pectin, mix then add to peppers in saucepan. Bring to a rolling boil, stirring constantly. Add remaining sugar and return to rolling boil, for exactly 1 minute. Remove from heat and skim off any foam that has developed. Ladle into jars to 1/4 inch of rim. Wipe rim clean, add lids and/or lids and rings. Process in water bath is using that method. I used the jars that you just have to boil the lids to create a seal.
