Sticky Tofu Halloumi Orzo Pasta Salad 🍝🥬
Fresh vibrant and with the stickiest “honey honey halloumi” style tofu, this pasta salad is GREAT for meal prep to bring to work or as a quick and easy lunch - recipe on .amy

You cannot beat a pasta salad for lunch, it’s light yet filling and you can pack as much plant-based fibre and protein as you like! These salad jars or bowls are full of a rainbow of veggies (the more colour = the more diversity for our guts), roasted tomatoes and a simple lemon vinaigrette 🍋
The sticky tofu is SO GOOD and a fun spin on the hot honey halloumi, made with a simple herby marinade and then air fry until crispy with some maple syrup and chilli flakes - toss it all together and you have a lunchtime salad that will keep for days and won’t go soggy! 🌿
Here are the ingredients:

⭐︎extra-virgin olive oil
⭐︎nutritional yeast
⭐︎lemon
⭐︎herbs (dried oregano, parsley and garlic granules)
⭐︎maple syrup

Chocolate Peanut Butter Cookie Granola Bars 🍫🥜
A cross between a golden chewy choc chunk cookie and a nutty granola bar, these bites are the best meal prep snack sprinkled with some flaky salt - recipe on .amy

I am ALWAYS looking for a new snack bar to try out and these are a cross between peanut butter cookies, choc chunk cookies and granola bars in the BEST way. They are golden, crispy crunchy on top and slightly tender in the middle - plus they are PACKED with chocolate and peanuts ⭐️
They are made with whole food ingredients like peanut butter, almond flour and oats with dark chocolate and peanuts for added fibre, polyphenols and protein. They are naturally vegan, easily GF and are a great meal prep snack for the week 🧡

Creamy Roasted Red Pepper and Butterbean Pasta 🍝🌶️
Ready in 30 minutes this dreamy high protein and high fibre pasta is the perfect weeknight meal, with kale, butterbeans and charred broccolini on top - recipe on .amy

The secret to a REALLY good pasta dish is all in the sauce, and this one packs in so much umami flavour from the sun-dried tomatoes and miso while being really creamy, a great source of protein and healthy and comes together in 2 minutes in the blender 🌿
Use your favourite pasta shapes, add in some butterbeans more plant-based protein and fibre and then enjoy hot or save for your lunchbox tomorrow! Everyone will love this one and there’s not much washing up either 🫧

Smokey Black Beans with Sweet Potatoes 🍠🥑
30 minute saucy beans loaded with plant-based protein and fibre, these flavour-packed smoked black beans are so good for meal prep and taste even better the next day. Recipe on .amy

Welcome back to another beany bowl and these saucy black beans - which are SO underrated. Black beans are such a powerhouse of goodness with 6g fibre and 5.5g protein per 100g and they soak up SO much flavour. They are earthy, rich and tender - perfect for paprika and cumin 🌶️
I LOVE these beans with some air fried or baked sweet potato fries, a spoon of hummus and avocado for that Mexican-style meal vibe but they are also great: stuffed into jacket potato; on toast; and with quinoa or rice ⭐️
