Sticky Tofu Halloumi Orzo Pasta Salad 🍝🥬

You cannot beat a pasta salad for lunch, it’s light yet filling and you can pack as much plant-based fibre and protein as you like! These salad jars or bowls are full of a rainbow of veggies (the more colour = the more diversity for our guts), roasted tomatoes and a simple lemon vinaigrette 🍋
The sticky tofu is SO GOOD and a fun spin on the hot honey halloumi, made with a simple herby marinade and then air fry until crispy with some maple syrup and chilli flakes - toss it all together and you have a lunchtime salad that will keep for days and won’t go soggy! 🌿
