Chicken Lettuce Wraps:

-2 tablespoon of sesame oil
-2 pound ground chicken
-1/2 pound ground pork
-2 cloves garlic, minced
-1 onion, diced
-1/4 cup hoisin sauce
-2 tablespoons soy sauce
-1 tablespoon rice wine vinegar
-1 tablespoon freshly grated ginger
-1 tablespoon Sriracha, optional
-1 (8-ounce) can whole water chestnuts, drained and diced
-2 green onions, thinly sliced
-Kosher salt and freshly ground black pepper, to taste
-1 head butter lettuce


Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes.
Stir in chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.

Slider Sunday: Hawaiian Roll Cheese Burger Sliders 🍔

Ingredients
1 16-ounce package dinner rolls
1 tbsp. vegetable oil
1/2 yellow onion, peeled and chopped
1 lb. ground sirloin (90/10)
1 1/2 tbsp. Worcestershire sauce
1/2 tsp. kosher salt
1/2 tsp. ground black pepper
1/4 c. mayonnaise
2 tbsp. ketchup
1 tbsp. mustard
1 8-ounce bag shredded cheddar-jack cheese
1/2 c. dill pickle slices
2 tbsp. olive oil
1 tbsp. everything bagel seasoning

Directions
Preheat the broiler. Remove the rolls from the packaging in one piece. With a serrated knife cut crosswise through the all of the rolls at once, to divide the top half from the bottom (keeping the sides of the rolls intact). Place both halves cut-side up on a sheet tray and broil for 2 minutes until lightly toasted. (If using slider rolls, separate the tops from the bottoms and place cut side up on the sheet tray, sides touching; broil as instructed). Set aside.
Heat the vegetable oil in a large skillet over medium heat. Add the onion and cook for 3 minutes until just slightly softened. Add the ground sirloin and cook, breaking up into small pieces with a wooden spoon. Increase the heat to medium-high. Add the Worcestershire sauce, salt, and black pepper, and stir well to combine. Cook until the beef is no longer pink and the liquid from the pan has almost fully evaporated, about 8 minutes. Remove from the heat.
Preheat the oven to 375˚. In a small bowl, mix together the mayonnaise, ketchup, and mustard.
Spread the cut sides of the rolls with the mayonnaise mixture, then sprinkle with half of the cheese in an even layer. Layer the meat mixture over the cheese, then top with the remaining cheese and the pickles. Cover with the top half of the rolls.
Brush the tops of the rolls all over with olive oil and sprinkle with everything bagel seasoning. Bake for 10 to 12 minutes or until the cheese is melty and the tops of the rolls are golden and toasted. Pull sliders apart and serve warm.

Instant Pot Birria
Birria de Res 🐮:

-2 to 4 lbs roast beef
-3-4 cups water
-2 carrots
-1 yellow onion left whole
-8 dried chile guajillo
-5 dried chile ancho
-4 dried Chile puya
-1 dried Chile Pasilla
-4 garlic cloves
-1 tsp dried oregano
-1 tsp dried thyme
-1 clove
-1 whole cinnamon stick
-1 tbsp beef bouillon (might need to add more later)
-2 bay leaves
-2 tbsp oil
-Salt and pepper to taste

First, remove the stems and seeds from the dried chiles. Then, cut them into smaller pieces. *Pro Tip: Since we’re pressure cooking the dried chiles in liquid for a long time, we don’t need to rehydrate them before cooking. put all the dried chiles in the Instant Pot Pressure Cooker. Then, press the “Saute” button to “Sauté More” to heat up the Instant Pot. Stir occasionally. Once you smell the chiles’ aroma (after ~4 – 5 mins), remove and set aside the toasted chiles. Brown one side of the beef for 5 minutes before flipping over, then brown the other side for another 5 minutes.
set aside the browned beef. Add sliced onions in Instant Pot, then saute for 3 minutes. Then, add garlic cloves, 2 bay leaves, cinnamon stick, 1 tsp dried Mexican oregano, ground cumin and 2 tsp (10g) tomato paste in Instant Pot *optional then saute for another minute. Now, pour 1 cup (250ml) stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom with a wooden spoon. Give it a quick mix. Add in the rest of your cooking liquid. Pressure Cook at High Pressure for 40 minutes, then Natural Release for 15 minutes. Pull your meat out use an immersion blender and blend all of your chilies. Shred meat and add it back in. Now create you queso tacos. Enjoy!

4 stalks Celery
1 Onion, medium
5 Garlic cloves or more
Small Potatoes (cut into quarters), small red *optional
2 tbsp Tomato paste

Baking & Spices
1/4 tsp Black pepper, ground fresh
1 French onion soup packet
1 Beef stew packet
1 Pot roast packet

3 Cups of water

Throw it all into the crock pot and cook for 6 to 8 hours on low.
