Working on some recipes and videos for our cooking channel we are starting! All gluten free and using fresh ingredients wherever possible. Which dishes would you like to learn how to make gluten free??? Let us know if the comments.

I haven’t had good focaccia since I was diagnosed with celiac disease around 5 years ago. But today I made some gf focaccia in our new kitchen and it was so so so good! Fluffy, herbal, and perfect to dip in olive oil and balsamic vinegar, or soak up some fresh marinara made with whole tomatoes and fresh herbs from our garden. Add in some quinoa pasta and Italian style meatballs and I am STUFFED! I am not sad about this meal!

I’ve been missing for a bit as I flew to Utah to be with family for my Grandpas funeral. I was able to see almost all my cousins and aunts/uncles and be there to honor the life of my grandpa.

Then I spent the time with my grandma, my parents and a bunch of time with my sisters!!! We ate bunches of food, spent time just hanging out and talking, and simply enjoying each others company.

Even though I am sad the week is over, I am SO VERY excited to head back to Ecuador to be with MY little family. I have missed the dearly!

After some setbacks we are back making progress on our casita. Finishing “smooth coating” this week. Electric is going in and we are going to start getting the ceiling and awnings put in next week!!

Then tile, glass, and all the finish work. I can’t wait to have my peace back and not have construction 6 out of 7 days of the week!
