Last nights dinner. Kept it simple.
I made Oven Baked Meatballs with a Cheesy Tomato Sauce. I made focaccia to go with it, to pick up the sauce left on your plate. I crumbed chicken thighs and fried that up and made a green salad to go with it all. All easy, all delicious

Penance season has ended so for my final lunch I made the bowlers Chicken with a creamy mushroom sauce with mashed potato and a green salad, Mexican beef stew with rice and Fritule (Croatian doughnuts). What a busy 10 weeks I've had cooking for 48 every Saturday. Today I rest.

Honestly, this is one of my favourite breakfasts.
Put a teaspoon of oil in a non stick frying pan that is large enough to fit your tortilla. Whisk two eggs in a bowl, pour into the pan, swirl it to cover the base of your pan. Place the tortilla on top, press down gently. Allow the eggs to cook. Once cooked, carefully flip over the tortilla and egg and cook the tortilla for a minute or two. Slide onto your plate. From the centre to the edge, cut the egg and tortilla. Now top one quarter with smoked salmon, one quarter with avocado, one with sliced tomatoes. Season well with salt and pepper, to taste. Fold the egg only edge over the tomato, then keep flipping until you have a wrap you can pick up and eat. So easy, so delicious, made in less than 10 minutes.

It was a cleaning out the fridge kind of night.
I roasted chicken thigh cutlets with potatoes. I boiled asparagus for 3 minutes, broccoli for 4 minutes and cauliflower for 5 minutes. Seasoned all with salt and white pepper, drizzled over extra virgin olive oil. My husband made the sauerkraut by sautéing an onion, then adding the sauerkraut and a small red chilli and he sautéed it for about 30 minutes.
