What would your last meal be? shows us hers. 🍅

🥧 Ingredients 🧀
1 refrigerated pie crust, cooked as directed
2 c. shredded mozzarella cheese (about 8 ounces)
4 medium or 5 Roma tomatoes, wedged and drained (or two large tomatoes, sliced and seeds removed)
4 cloves garlic, peeled and minced
1 c. fresh basil leaves, julienned (or roughly chopped)
1/2 c. Sir Kensington’s mayonnaise
1/4 c. parmesan, shredded
1/8 tsp. white pepper

1️⃣ Lay tomatoes on paper towel and light salt
2️⃣ Layer a cooked pie crust with 1/2 cup mozzarella and let cool
3️⃣ Add tomatoes on top of cheese, covering the bottom
4️⃣ Top with minced garlic and fresh basil
5️⃣ Mix 1/2 cup mayo with 1 1/2 cups mozzarella, 1/4 cup parmesan, and 1/8 tsp white pepper and spread evenly on top
6️⃣ Bake at 375°F for 30-35 mins (until bubbly and brown)

Enjoy warm or at room temp!

🍲 Butternut Squash Chili
2 tablespoons olive oil
1 medium sweet onion, diced
1 large red bell peppers, chopped
1 (1 1/2 pound) butternut squash, peeled and cut into 1/2-inch cubes
3 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon chopped chipotle pepper in adobo, plus more to taste
1 teaspoon smoked paprika
1⁄4 teaspoon ground cinnamon
2 (14-ounce) cans fire roasted diced tomatoes
2 cups vegetable broth
2 (15-ounce) cans black beans, rinsed and drained
Kosher salt, to taste
2 ripe avocados, sliced
1/2 cup roasted pepitas

🍲 For Chipotle Lime Crema
1 cup Sir Kensington’s Chipotle Mayonnaise
Juice and zest of 1 lime
1/4 cup fresh cilantro, finely chopped

Juice of 1/2 lemon
3-4 anchovies
1-2 tbsp of Tamari
1/2 cup fresh parm
2 tbsp Dijon mustard
1/2 tsp garlic power
black pepper
pinch of salt
