Good morning! Happy Saturday. It’s 37 degrees here in the Hill Country of Texas and there’s just something about a hearty tender roast on a cold day.

The kind of meal that fills the house with the smell of garlic and herbs, fogs up the windows, and pulls everyone into the kitchen asking, “Is it ready yet?”

Tender beef.

Root vegetables soaking up all that rich broth.

Creamy mashed potatoes with a drizzle of gravy over the top.

This is comfort food in its coziest form. The kind that slows the evening down and makes the day feel complete. 🤍

If you need a simple, no-fuss dinner that feels like a warm hug on this cold day, this one’s for you. I simply put mine in the crock pot this morning so we can fill the house with that yummy smell all day.

Cozy Herb Pot Roast with Root Vegetables
Serves 4 to 6

Ingredients
-3 to 4 lb beef chuck roast
-Salt and pepper
-3 tablespoons flour
-2 tablespoons olive oil
-4 cloves garlic, minced
-2 cups beef broth
-1 tablespoon fresh rosemary, chopped
-1 tablespoon fresh thyme
-4 carrots, peeled and cut into chunks
-3 parsnips or extra carrots, chunked
-1 large onion, quartered
-1 to 2 pounds baby potatoes or diced russets

Optional: celery or turnips

Instructions:

Pat the roast dry and season generously with salt and pepper. Lightly coat all sides with flour.

Heat olive oil in a large Dutch oven or heavy pot over medium-high heat.

Sear the roast on all sides until deeply browned. This builds flavor. Do not rush this step.

Remove the roast and add garlic to the pot. Stir for 30 seconds until fragrant.

Pour in beef broth, scraping up all the browned bits from the bottom.

Add rosemary and thyme. Return the roast to the pot.

Arrange root vegetables around the roast.

Cover and cook on low for 3.5 to 4 hours, or until the beef is fork-tender.

Oven option: 300°F, covered, same timing.

Remove roast and vegetables. Simmer the remaining liquid uncovered for 5 to 10 minutes to thicken into a light gravy.

To Serve:
Pile mashed potatoes high.

Top with tender beef and vegetables.

Drizzle generously with that herby, savory gravy.

Pure cozy.
Pure comfort.

I’ve been cooking for a family of 6 for 20-something years now, and if there’s one thing I’ve learned, it’s this: you have to make it fun or you’ll burn out fast.

This year, I bought myself a silver tray from Goodwill and turned it into a little snack + drink station while I cook. I pull out the fine china, the pretty glassware, the things I used to save for “someday.” Turns out, Tuesday night dinner prep counts.

I’ve always loved thrifting beautiful pieces and giving them a second life. There’s something so grounding about using what you love instead of storing it away. A small bite, a favorite cup, and suddenly the kitchen feels less like a chore and more like my space again.

Cooking doesn’t have to be miserable. It can be cozy. It can be beautiful. It can even feel a little special.

It’s been a minute since I ran an admin page. Looking through my admin feed on this end makes me realize how many voices there are out there giving you their opinions, their authoritative tone on matters… and frankly, it’s just a lot of noise.

The rise of “influencers” and the ease of becoming one, on all platforms, has created a constant stream of buy this, do that atmosphere online.

What are y’all looking for in your feed these days? Your time is important and when you get the chance to scroll, are you looking for how to’s, recipes, hacks, wisdom, encouragement… I want to know. I have so many thoughts on where I want to see this page grow, but times are different than when I started this blog 16 years ago.
