1 ½ cups graham cracker crumbs vanilla wafer crumbs can also be used
4 tablespoons salted butter melted
3 tablespoons light brown sugar granulated sugar can also be used
Mini Cheesecakes
1 ⅔ cup powdered sugar
1 tablespoon lemon zest

2 tablespoons lemon juice about 1 lemon
½ teaspoon vanilla extract
2 large eggs
18 tablespoons blueberry pie filling a little more than a cup

Instructions:
Graham Cracker Crusts
Preheat the oven to 325°F. Line two cupcake tins with 18 liners. Set aside.
Combine the graham cracker crumbs, melted butter and sugar in a small bowl and stir to combine. (You can also add the graham crackers to a food processor and blend with the brown sugar until processed. Then add the melted butter and pulse to combine.)
Spoon 1 ½ tablespoons of the crust mixture into each liners. Use the bottom of a measuring cup or glass to press the crust firmly into each liner.
Bake the crusts for 9 to 12 minutes or until the crust just begins to turn golden brown. Remove from the oven and allow the crusts to cool completely.

Cheesecake Filling
In a large bowl or the bowl of a stand mixer, combine the powdered sugar and lemon zest and beat for 2 minutes or until fragrant.
Add the softened cream cheese and beat on low speed until until light and fluffy, scraping down the sides of the bowl as needed, about 2 to 3 minutes.
Add in the sour cream, lemon juice and vanilla extract and beat until fully combined, scraping down the sides of the bowl as needed.
Add in the eggs, one a time, and mix just until combined. Do not over beat.
Transfer about ¼ cup of the cheesecake filling into each of the prepared crusts, or until about ¾ full. Top with a tablespoon of blueberry pie filling and use a knife or a toothpick to gently swirl into the cheesecake.
Bake mini cheesecakes for 15 to 20 minutes or until the edges are just set and the middle is very slightly jiggly. Check every minute or so to ensure the cheesecakes don’t get over baked.
Remove from the oven and set on a cooling rack and allow to cool to room temperature. Cover cheesecake lightly with plastic wrap and chill in the refrigerator for at least 2 hours before serving.
Serve with whipped cream, fresh blueberries or additional blueberry pie filling and enjoy!

With a buttery graham cracker crust, smooth lemon cheesecake filling, and a beautiful blueberry swirl, these mini cheesecakes are an elegant dessert for spring brunches, summer parties, holidays, and family gatherings.

Bright, colorful, and irresistibly moist, this 4th of July Poke Cake is a festive dessert that brings patriotic flair to every summer celebration. 🇺🇸🍰

Ingredients:
16.25 ounces white cake mix (1 box) plus ingredients listed on box oil, eggs, water
1 box Strawberry Jello 3.4 ounce size
2 cups boiling water divided
1 cup cold water divided
1 box Berry Blue Jello 3.4 ounce size
8 ounces cream cheese
2 cups powdered sugar
1 1/2 cups heavy whipping cream
1 teaspoon vanilla extract
red, white & blue sprinkles

Instructions:
Spray a 9×13 pan with non-stick spray and set aside. Preheat your oven to 350 degrees.
Prepare cake according to the package directions on the box.
Pour cake batter into the prepared cake pan and bake for the required time. Let the cake cool completely.
Using a straw or the end of the handle of a wooden spoon, poke holes in rows throughout the top of the cake.
In a medium mixing bowl, whisk together 1 cup boiling water, and the red jello mix, until dissolved. Stir in 1/2 cup cold water. Set aside.
Using a drinking straw, add 1/2 of the red jello mixture into half of the holes. To draw the liquid into the straw, just put the end of the straw in the liquid and then place your finger over the other end.
In another bowl, repeat the same process to mix the berry blue gelatin.
Using a clean straw, add 1/2 of the blue jello mixture to the remaining holes. If you want to drizzle more of the jello over the top of the cake, be sure not to mix the two colors.
After you’ve added the jello, cover with plastic wrap and place cake in the fridge to chill for 4-6 hours, or for best results, overnight. Before serving, make the frosting.
In a large mixing bowl, beat the cream cheese on medium speed until smooth.
Add the powdered sugar, 1 cup at a time, and mix on low speed in between each addition until combined. Add the vanilla extract and mix for about one minute.
In a separate bowl, add the heavy whipping cream, and mix with a hand mixer for several minutes, until whipped topping thickens with stiff peaks.
Add the whipped cream to the cream cheese mixture. Mix on medium speed until everything is well combined.
Spread the frosting over the cake and smooth out evenly over the surface
Top with red and blue jimmies or patriotic sprinkles. Enjoy!

Made with fluffy white cake, vibrant strawberry and berry blue gelatin, a rich cream cheese whipped topping, and festive sprinkles, this make-ahead dessert is perfect for Independence Day barbecues, picnics, potlucks, and family gatherings.

Ingredients:
1 (15.25 oz.) box Red Velvet Cake Mix
⅓ cup vegetable oil
2 large eggs
1 cup Red White, & Blue M&M’s
½ cup granulated sugar optional coating

Directions:

Use a medium cookie scoop to portion out the dough and gently roll into balls. Then roll the balls in the sugar to coat. Place the balls of dough on the prepared baking sheet at least 2 inches apart.
Bake for 8 to 9 minutes. Do not over bake these cookies, they will look puffy and slightly underdone, but they will finish cooking on the baking sheet after coming out of the oven.
