Here are some general guidelines on how to cook wagyu beef based on its marbling score:
- For low to medium marbling scores (3 to 6), you can treat wagyu beef like any other steak. Season it lightly with salt and pepper, and sear it on a hot skillet or grill for a few minutes per side, depending on the thickness and your preferred doneness. You can also add some garlic, herbs, or butter to the pan for extra flavor. You can also use the good old South African braai method over hot coals. Rest the steak for 5 minutes before slicing and serving.
- For medium to high marbling scores (7 to 9), you need to be more gentle with wagyu beef. Season it lightly with salt and pepper, and bring it to room temperature before cooking. Use a cast iron skillet or a grill with a lid, and cook the steak over medium-high heat for 2 to 3 minutes per side, or until the internal temperature reaches 51°C for rare or 57°C for medium-rare. You can also baste the steak with some melted truffle butter or sesame oil for extra richness. You can also use the good old South African braai method, but beware the dripping fat onto charcoal can cause flames which might sear the meat too much. Also ensure the coals are not too hot. Rest the steak for 5 minutes before slicing and serving.
- For very high marbling scores (10 to 12), you need to be very careful with wagyu beef. Season it lightly with salt and pepper, and bring it to room temperature before cooking. Use a cast iron skillet or a grill with a lid, and cook the steak over low to medium heat for 1 to 2 minutes per side, or until the internal temperature reaches 49°C for rare or 54°C for medium-rare. You can also baste the steak with some melted truffle butter or sesame oil for extra richness. It is not recommended that you braai this high marbling score Wagyu beef on a braai. Rest the steak for 5 minutes before slicing and serving.
Remember, wagyu beef is best enjoyed in small portions, as it is very rich and filling. You can savour it as a steak, a burger, a sushi, or even a sandwich. Just make sure you cook it properly, as overcooking can ruin its delicate flavour and texture.
