In South Africa, dedicated and passionate farmers raise two breeds of Wagyu cattle:

Japanese Black (Kuroge): This is the most common breed and has a black coat colour. It produces the highest quality of marbling and tenderness, with a buttery and umami (savoury, rich, meaty) flavour.

Japanese Red (Akaushi): This breed has a red-brown coat colour and produces leaner meat with a mild and nutty flavour.

Did you know that wagyu beef is one of the most luxurious and delicious meats in the world? Wagyu means "Japanese cattle" and it refers to four main breeds that produce exceptionally well-marbled and tender meat. But what makes wagyu beef so special is not only the genetics, but also the way the cattle are raised.

Wagyu cattle are treated with utmost care and respect by their farmers. They spend the first year of their lives with their mothers, grazing on pasture. They are fed high-energy ingredients, such as hay, grain, wheat, and even beer! Beer helps stimulate their appetite and digestion, especially in hot weather.

Some farmers also massage their wagyu cattle with a stiff brush to improve blood circulation and relax their muscles. This practice is believed to enhance the marbling and flavour of the meat. Wagyu cattle are raised in a stress-free environment, without any rigorous activity or adrenaline. They are pampered for three years living in open fields, not feedlots, until they reach about 700 kilograms.

The result is a meat that is so tender, juicy, and buttery, that it melts in your mouth. Wagyu beef has a unique aroma and taste that comes from the fatty acids in the intramuscular fat. It is also rich in omega-3 and omega-6, which are good for your health.

Do you love wagyu beef as much as I do? If so, you might be wondering how to cook this amazing meat to get the most out of its flavour and texture. Well, I'm here to help you with some tips and tricks on how to prepare wagyu beef according to its marbling score.

Here are some general guidelines on how to cook wagyu beef based on its marbling score:

- For low to medium marbling scores (3 to 6), you can treat wagyu beef like any other steak. Season it lightly with salt and pepper, and sear it on a hot skillet or grill for a few minutes per side, depending on the thickness and your preferred doneness. You can also add some garlic, herbs, or butter to the pan for extra flavor. You can also use the good old South African braai method over hot coals. Rest the steak for 5 minutes before slicing and serving.

- For medium to high marbling scores (7 to 9), you need to be more gentle with wagyu beef. Season it lightly with salt and pepper, and bring it to room temperature before cooking. Use a cast iron skillet or a grill with a lid, and cook the steak over medium-high heat for 2 to 3 minutes per side, or until the internal temperature reaches 51°C for rare or 57°C for medium-rare. You can also baste the steak with some melted truffle butter or sesame oil for extra richness. You can also use the good old South African braai method, but beware the dripping fat onto charcoal can cause flames which might sear the meat too much. Also ensure the coals are not too hot. Rest the steak for 5 minutes before slicing and serving.

- For very high marbling scores (10 to 12), you need to be very careful with wagyu beef. Season it lightly with salt and pepper, and bring it to room temperature before cooking. Use a cast iron skillet or a grill with a lid, and cook the steak over low to medium heat for 1 to 2 minutes per side, or until the internal temperature reaches 49°C for rare or 54°C for medium-rare. You can also baste the steak with some melted truffle butter or sesame oil for extra richness. It is not recommended that you braai this high marbling score Wagyu beef on a braai. Rest the steak for 5 minutes before slicing and serving.

Remember, wagyu beef is best enjoyed in small portions, as it is very rich and filling. You can savour it as a steak, a burger, a sushi, or even a sandwich. Just make sure you cook it properly, as overcooking can ruin its delicate flavour and texture.

So, if you ever get a chance to try wagyu beef, don't miss it. It is truly a culinary experience that you will never forget. Trust me, once you go wagyu, you never go back!

When describing the sensation of eating Wagyu, people often use the words rich, juicy, buttery and beefy that is formed by the taste sensation, flavour and aroma on the palate.

The unique levels of unsaturated fats that are characteristic of Wagyu means that it dissolves at lower melting temperatures – it literally melts in your mouth.

The abundance and fineness of the marbling in the meat, represented by the marble score, creates that ‘melt in your mouth’ sensation and taste that is uniquely Wagyu.

Hey, meat lovers! Have you ever wondered why wagyu beef is so delicious and is more premium priced than other beef? Well, let me tell you the secret behind this mouth-watering meat.

Wagyu beef comes from a special breed of Japanese cattle that produce a high-quality meat with intense marbling. Marbling is the term for the streaks of fat that run through the red meat, giving it a tender, moist, and flavourful texture. But don't worry, this type of fat is very healthy for you, and actually reduces cholesterol!

Wagyu beef is graded by its fat quality score, which ranges from 1 to 12, with 12 being the highest and most rare. The higher the score, the more marbling and the more expensive the meat.
