🔥 Fire & Fresh Signature Seared Tuna Tataki

Serves: 4

Ingredients

Tuna

* 600g sushi-grade yellowfin tuna loin
* 2 tbsp sesame oil
* Salt flakes
* Freshly cracked black pepper
* 2 tbsp black sesame seeds
* 2 tbsp white sesame seeds

Asian Sesame Glaze

* 60ml soy sauce
* 30ml mirin
* 30ml rice vinegar
* 1 tbsp sesame oil
* 2 tbsp honey
* 1 tsp grated fresh ginger
* 1 garlic clove, finely grated
* 1 tsp lime juice

Wasabi Aioli

* 100ml good-quality mayonnaise
* 1 tsp wasabi paste (adjust to taste)
* 1 tsp lime juice

Pickled Cucumber

* 1 cucumber, thinly sliced
* 50ml rice vinegar
* 1 tbsp sugar
* Pinch of salt

Garnish

* Micro herbs
* Spring onion, finely sliced
* Toasted sesame seeds
* Fresh coriander (optional)
* Lime wedges



Method

1. Pickle the cucumber

Mix the rice vinegar, sugar, and salt until dissolved. Add the cucumber slices and refrigerate for at least 30 minutes.

2. Prepare the glaze

Combine the soy sauce, mirin, rice vinegar, sesame oil, honey, ginger, garlic, and lime juice in a small saucepan. Simmer gently for 3–5 minutes until slightly reduced. Chill before serving.

3. Coat the tuna

Pat the tuna dry. Brush lightly with sesame oil, season with salt and pepper, then roll the loin in the mixed sesame seeds until evenly coated.

4. Sear the tuna

Heat a heavy pan until smoking hot.

Sear the tuna for 20–30 seconds on each side. The outside should be caramelised while the centre remains rare.

Immediately transfer the tuna to a chilled plate and rest for 2 minutes.

5. Slice

Using a very sharp knife, slice the tuna into approximately 1 cm thick slices.



Plating

* Spoon a little wasabi aioli onto the plate.
* Arrange the tuna slices in a neat line or fan.
* Drizzle the Asian sesame glaze around and lightly over the tuna.
* Add the pickled cucumber.
* Finish with micro herbs, spring onion, toasted sesame seeds, and a squeeze of fresh lime.



Chef’s Notes

* Only use sushi-grade tuna for this dish.
* A very hot pan is essential to achieve a quick sear without overcooking the centre.
* Chill the tuna well before slicing to keep the cuts clean and neat.
* Serve immediately for the best texture and flavour.
