I am absolutely besotted with using onions in my cooking. Be it as a vegetable on its own, or as part of a dish or used in a bredie. These shallots were fried in the same pan I fried beef fillet. Added fresh thyme, garlic, salt and black pepper, butter and then finished with small amount of chenin blanc.
