Our Estate Chardonnay vineyard is growing strong, having already received its fourth spray of the season. This year, the block budded 16 days earlier than last year, giving us an early start and another reminder that no two vintages ever follow quite the same path.

There are still many months between these first shoots and harvest, and nature will ultimately set the pace. For now, we’ll keep tending to the vines, watching them grow and looking forward to seeing what this season has in store. 🍷

As the season changes, so does our menu. 🌿

We’re excited to welcome spring to La Vierge with a new menu that is vibrant, fresh and full of flavour, celebrating the ingredients and lighter days that come with the season.

It may only be here for a short while, but we look forward to seeing the joy around the table as you discover each dish, preferably with a glass of wine in hand. 🍷
