Top tips for the perfect roast lamb

1. Pick the right cut (we got your covered there) How to know if it’s fresh? “You have to trust your butcher,”

2. Lamb is best when served rare to medium. If you have a thermometer,

Rare at 60°C,
Medium-rare at 60-65°C,
and medium at 65-70°C.

They do better when they're cooked at lower temperatures for long periods of time.
(Don't rush the roasting process)

3. Score the fat of the lamb roast with a small, sharp knife. This will help the fat render out and create a nice crisp and browned surface.

4. Always rest your meat before cutting. Remove it from the oven, place a foil tent loosely over it, and leave it for 15-20 minutes. A well-rested piece of meat will be more tender and juicy. Cut the meat across the grain so that it's tender when you eat it.

5. A popular flavour combinations are:

Lemon, garlic, unsalted butter, rosemary, thyme and sage.

Slice small incisions across the surface of the meat and insert slivers of garlic. Then, massage the lamb with olive oil, rosemary, and salt, and lay it in a roasting pan on a bed of herbs like rosemary sprigs, thyme, and sage.

Happy New Year. We wish you all the best for 2022!

Delft butchery and deli was established in 1993 back in the old Randridge mall shopping centre, after 3 years we relocated to Beyers Naudé in the BlackHeath Rendezvous shopping centre (McDonald’s) before settling into our new home in Honeydew at Eagles Landing in 2005. In 2018 we grew and expanded the shop, as well as broadened our extensive range.

We are now in 2022 and we ae very excited to see what this year has in store for us. Thank You for being part of our Journey so far and we hope you continue you to do so in this bright new year!
