KOO would’ve thought it would get this cold? 🍽️ Make our KOO Baked beans with brown sugar bacon for your customers, so they can start their day a little bit warmer.

SERVES 10 | INGREDIENTS

200g Back bacon cut into pieces
1 Onion, small dice
4 tins KOO Baked Beans
1 sachet All Gold Tomato Paste
125ml BBQ sauce
80g Brown sugar
30ml Colman’s Hot English Mustard
15ml Holbrooks Worcestershire Sauce
15ml Butter

30 MINS | METHOD

1. In a medium hot pan, sauté the onion until translucent.
2. Lower the heat, add the bacon pieces and brown sugar, and continue to sauté until the sugar has started to caramelize around the bacon and onion.
3. Continue by adding all the sauces and stir to ensure it does not catch on the bottom.
4. Lastly add the KOO Baked beans and heat it all through.
5. Serve up and enjoy.

Let’s bring people together with this delicious Spiced Pull Apart 3 in 1 Bread that’s a creative take on the traditional Hot Cross bun. You can swap out the raisins for some choc-chips and amp up the spice. 🍞 Here’s how:

1 kg Golden Cloud 3 in 1 Premix
10 g instant dry yeast
15 ml granulated sugar
800 ml lukewarm water
15 ml nutmeg
25 ml cinnamon
80 g Beacon chocolate, chopped up
80 g Beacon chocolate, melted for garnish at the end.

1. Mix the lukewarm water, sugar and yeast together.
2. Place the 3 in 1 Premix, cinnamon and nutmeg in a standing mixer with a dough hook attachment.
3. On a low speed, slowly start adding the yeast mixture to the dry goods.
4. Once all the liquid has been incorporated, knead the dough for 5 min on a medium speed until smooth.
6. Add the chopped chocolate and mix for 1 min until combined.
7. In a greased cake tin, start making small dough balls (60g each). Place the dough balls in a circle and continue to place them on top of each other.
8. Let the dough rise in a warm place for 40 min, as this is a large amount of dough on top of each other.
9. When doubled in size, bake in an oven at 180℃ for 60 min.
10. Once baked, take out of the oven and let it cool slightly.
11. While still warm but without burning yourself, take buns out of the cake tin and place on serving dish. Top with melted chocolate and serve.

Chef tip:
Make individual bread in empty tuna cans and bake for 20-25 min or until baked through.

Koo would’ve thought old school peaches could be deliciously fancy? Give your customers a new sweet treat with this creative Koo Peach & Blueberry Croissant Pudding. 🍑🫐 🥐 Here’s how:

6 large stale croissants, thinly sliced
30ml All Gold Connoisseur Blueberry Jam
1 tin KOO Peach Slices, drained
80g Beacon slab white chocolate, chopped
75g butter, cubed
For the sauce:
4 cups pouring vanilla custard (like Ultramel) or homemade
1 cup pouring cream
1/2 cup sugar
2 tsps vanilla essence
To serve:
Extra KOO Peach Slices
Ice-cream

Preheat the oven to 180℃. Spray and Cook an oven dish or individual ramekins.
2. Spread the All Gold Connoisseur Blueberry Jam on to the croissant slices.
3. Layer the sliced croissants in the oven dish attractively and top with drained peach slices, All Gold Connoisseur Blueberry Jam and then scatter white chocolate over the top.
4. Whisk all the sauce ingredients together and pour all over the pudding. Allow to saturate and stand for 10 minutes before baking.
5. Dot the butter cubes over the top of the pudding.
6. Bake for 20 to 30 minutes until light golden and crispy on the top and heated through.
7. Serve with extra Koo Peaches and vanilla ice-cream, garnish with mint.

Chef tips:
Make as individual treats for tea time.

400g (2 cups) ACE Quick Cook Samp
2 litres (8 cups) water
Salt and pepper to taste
45ml (3 tablespoons) butter
1 onion, chopped
2 cloves garlic, crushed
4 large brown mushrooms, sliced
1 green pepper, diced
45ml (3 tablespoons) oil
12 medium prawns, peeled and cleaned
200g calamari rings
200g hake steaks or any firm fleshed fish
12 cherry tomatoes

1. Cook samp in salted boiling water until cooked through and very soft +/- 2 hours. (Keep replenishing the water so that it does not burn.)
2. In a large heavy based frying pan or wok, melt butter, add onion and garlic. Sauté until transparent. Add mushrooms and green pepper, cook until soft.
3. In another frying pan heat oil, add prawns, calamari and hake, fry gently until cooked +/- 10 minutes.
4. Add seafood to onion mixture, toss lightly, add cooked ACE Samp and cherry tomatoes, mixing carefully. Season to taste with salt and pepper.
5. Spoon onto a serving platter and top with mussels. Serve warm.

You will need:
½ blueberries
Juice of 1 lemon
2 sprigs of mint
Rose’s Blueberry Flavoured Cordial ~ 90ml
Ginger beer ~ 500ml
Vodka ~ 60-120ml (optional)
Ice

1. In a cocktail shaker, add the blueberries, lemon juice, mint, and Rose’s Blueberry Flavoured Cordial.
2. Muddle together for about a minute.
3. Fill two serving glasses with ice.
4. Add the vodka and fill glasses with ginger beer.
5. Top with strained blueberry mixture.
6. Garnish with more fresh mint and blueberries and enjoy.

For all your full, ½ and ¼ chicken portions, add this Butterflied Mayo Chicken recipe to your flavour options. It’s a heartier twist on the classic lemon, garlic and herb. 🍗🍋🧄 Here’s how:

1 whole butterflied (spatchcocked) chicken
1/3 cup (80ml) Crosse & Blackwell Tangy Mayonnaise
4 cloves garlic, crushed
2 Tbsp (30ml) olive or vegetable oil
Juice of 2 lemons
1 big sprig fresh rosemary
3 sprigs fresh thyme
Ground black pepper & salt, to taste

1. Place the chicken in a large zip-lock plastic bag. (You can also marinate the chicken in a dish).
2. In a bowl, whisk together the mayonnaise, garlic, oil and lemon juice (Reserve the squeezed-out lemons).
3. Strip the rosemary and thyme leaves from their stalks, coarsely chop them and mix them into the bowl. Season with plenty of ground black pepper, but no salt as yet.
4. Pour this mixture into the bag, add the squeezed-out lemon halves, then press out any air and seal. Gently massage the chicken through the bag so it is coated all over with the marinade.
5. Place in the fridge overnight or for at least four hours, turning the bag occasionally.
6. When you are ready to braai the chicken, place a big double layer of heavy tin foil on the counter. Put the chicken in the middle and fold up and seal the edges to form a parcel. Reserve the bag containing the leftover marinade.
7. Gently cook the foil parcel over low braai coals for 25 minutes, turning it three or four times.
8. Open the parcel, remove the chicken, add salt to taste and place it directly on the braai grid. Braai over low coals for a further 25 - 35 minutes or until the skin is crisp and golden, and the chicken is cooked right through. Baste the chicken often with the leftover marinade.
9. You can also roast the chicken in an oven. Preheat the oven to 180℃, place the chicken on a baking sheet and roast for 45-55 minutes or until cooked right through basting occasionally with the leftover marinade.

Rice doesn’t always have to be savoury, switch it up and turn it into a sweet dessert. 🍚
Serve your patrons a delicious Caramel and Coconut Tastic Rice Pudding. Here’s how:

1 can condensed milk OR Caramel Treat
210g Tastic Parboiled Rice
250ml water
250ml full cream milk
5ml vanilla essence
2ml salt
250ml cream
100g desiccated coconut
30g cocoa powder

Optional:
Beacon chocolate slab for grating as garnish.
Toasted sliced almonds.

1. Place the can of condensed milk into a pan and cover with cold water. Bring to the boil, simmer and cover and cook for 2 1/ 2 - 3 hours, topping up with hot water from time to time so that the pan doesn't run dry. Allow to cool completely. Alternatively use premade Caramel Treat.
2. Place the Tastic Parboiled Rice into a pan with the water and bring to a boil, keeping an eye on it not to boil dry, stirring constantly. Once cooked add milk, vanilla essence and salt.
3. Place the caramel contents from the cooled condensed milk can into a mixing bowl and beat using an electric whisk. Stir in the rice mixture.
4. Add the coconut and cocoa powder if desired.
5. Spoon the mixture into serving dishes and chill until serving.
6. Serve topped with whipped cream, grated Beacon chocolate and toasted almonds if desired.

Chef tips:
Divide rice pudding and flavour one half with cocoa powder and the other with caramel.
Layer cocoa rice pudding and caramel rice pudding alternatively.
Serve warm or chilled.
