Dangerous time to be cottage cheese… 😂
I’m not really sure when it happened but apparently if it doesn’t have protein it doesn’t count. So here is a High-Protein Tuna Melt recipe.
What you need:
For the “bagels”
125g cottage cheese
125g thick Greek yoghurt
250g self-raising flour
8g psyllium husk
Pinch of salt
1 egg, beaten, for brushing
Sesame or mixed seeds, optional
For the spicy tuna filling:
1 tin tuna, drained well
Greek yoghurt
Mayo
1 tsp of Dijon mustard
Red onion, finely chopped
Chilli crunch
Splash of soy sauce
A few tsa tsa’s of Chemical X
Picked Jalapeños
Salt and black pepper, to taste
80g grated cheese
What to do:
Preheat your oven to 190°C. Add the cottage cheese and Greek yoghurt to a bowl, mix until smooth, add the self-raising flour, salt and psyllium husk and mix until you have a soft dough. Leave the dough to rest for about 5 minutes.
Divide the dough into four equal pieces, roll each piece into a ball and then poke your finger through the centre, gently stretching it out to create a bagel shape.
Place the bagels onto a lined baking tray, brush them with the beaten egg and sprinkle with any seeds you like. Bake for 20–25 minutes, until golden and cooked through.
While the bagels are baking, make your spicy tuna filling. Add the drained tuna to a bowl and flake it with a fork before mixing through the yoghurt, mayo, red onion, soy, chili crunch and mustard. Season with chemical X salt and black pepper to taste.
Once the bagels are done slice them in half and spoon the tuna generously over each bagel half and finish with jalapeños and grated cheese.
Place them back into the oven and bake until the cheese is melted, bubbling and golden.
Allow to cool and bona pattern (Bon Appetite). 😬
