Super soft sojee by π΄πππππ π½
Sojee (semolina) is comfort food. This version is not too sweet (ofcourse, if you prefer you may always top us the sweetness), super-soft and absolutely decadent. The perfect sweet dish ππ½
Super Soft Sojee

3 tbsp ghee
Β½ cup semolina
2 elachi (cardamom) pods
Whisk together:
2 eggs
2 cups milk
ΒΌ cup sugar
3 tbsp dessicated coconut
Β½ tsp elachi powder
4 tbsp condensed milk or to taste
βIn a bowl whisk together the eggs, milk, sugar, coconut, elachi powder and condensed milk and set aside.
βHeat ghee in a medium sized pot on medium-low heat. Add in elachi (cardomom) pods and braise for a few seconds until fragrant. Add in semolina, braise until it starts to turn a light pinky colour. Do not allow the mixture to brown.
βPour in the egg mixture, whisk quickly until smooth. The mixture will be very liquid, ensure no lumps remain.
Cover with a lid and keep heat low.
Stir every 5 mins until the mixture starts to cook as the liquid gets absorbed.
βOnce the liquid begins to dry but the sojee is still moist (after about 6 mins), remove from heat but keep the pot lid on.
βAllow it to stand 5-10 mins, it will steam is it stands and result in the correct consistency.
Note: as sojee cools it thickens so donβt be tempted to dry it out too much while hot. Serve warm sprinkled with almonds (and cream optionally.)
