🍠🥬💚 New Recipe

Sweet Potato and Chickpea Salad
Serves: 2

Ingredients

2 medium sweet potatoes, sliced
1 can chickpeas, drained and rinsed
1/2 red onion, finely sliced
1/2 avocado, peeled and sliced
Fresh rocket, roughly chopped
Fresh dill, chopped

Dressing

2 Tbsps olive oil
1 Tbsp balsamic vinegar
1 tsp honey or maple syrup (for a vegan option)
Salt and pepper to taste

Method

1. Preheat your oven to 200°C.
2. Place the sweet potatoes on a baking tray, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
3. Roast in the oven for about 30 - 35 minutes or until the sweet potatoes are tender.
4. While the sweet potatoes are roasting, in a large bowl, combine the chickpeas, red onion, avocado, rocket and dill.
5. In a small bowl, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), and a pinch of salt and pepper.
6. Once the sweet potatoes are done, let them cool for a few minutes, then add them to the bowl with the chickpeas and vegetables.
7. Drizzle the dressing over the salad and toss everything together until well combined.
8. Serve and enjoy!

A quick & healthy mid-week recipe! 🍋🌱

Lemon & Herb Chicken Breasts

Serves 2

Ingredients

2 boneless, skinless chicken breasts
2 Tbsps olive oil
2 Tbsps lemon juice
1 tsp dried thyme, (or oregano, or rosemary)
Salt and ground black pepper, to taste
½ tsp garlic powder (optional)

Method

Whisk the olive oil, lemon juice, dried herbs, salt, pepper, and garlic powder (if using), together in a bowl to make a marinade.
Place the chicken breasts in a shallow bowl and pour over the marinade, make sure the chicken is coated evenly all over.
Let them marinate for about 15-20 minutes, turning them a couple of times to coat on all sides.
Heat a grill pan or frying pan up over medium high heat.
Grill the chicken breasts for 6-8 minutes per side, or until they are cooked through and have browned on both sides.
Remove the chicken from the pan and let them rest for a few minutes before slicing.
Serve with your choice of sides, such as steamed vegetables, quinoa, or a salad.
