🔥 BRAAI OYSTERS WITH GARLIC HERB BUTTER 🦪

There’s nothing quite like fresh West Coast oysters finished over an open flame.

Smoky, buttery, and packed with ocean flavour — this is the perfect starter for your next braai.

🦪 INGREDIENTS
• 12 fresh oysters (half shell)
• 100g butter (melted)
• 2 garlic cloves (finely chopped)
• 1 tbsp fresh parsley
• Juice of ½ lemon
• Cracked black pepper
• Parmesan cheese (optional)
• Chili flakes (optional)

🔥 METHOD

1. Heat your braai to medium-high heat.
2. Place oysters directly on the grill.
3. Add a spoonful of garlic butter mixture to each oyster.
4. Cook for 4–6 minutes until bubbling and slightly smoky.
5. Optional: Top with Parmesan for the last minute.
6. Finish with lemon juice and cracked black pepper.

Serve immediately with chilled white wine or ice-cold bubbly 🍾

RED TIDE...

Red tide is a natural phenomenon, often called a harmful algal bloom (HAB), occurring when microscopic algae (specifically dinoflagellates) multiply rapidly, discolouring the water and often producing toxins. It causes our oysters to accumulate poisonous biotoxins via filter-feeding, making them dangerous to consume and forcing temporary harvest closures.

What is it?
Red tide is not actually red, but often brown or green, caused by nutrient-rich water upwelling along the West Coast, sparking algae blooms.

Impact on Oysters:
Oysters are filter feeders that ingest the algae and accumulate toxic toxins in their tissues. Even if the oysters are not killed, they become unsafe to eat.

Saldanha Bay Situation:
While red tides hit the West Coast frequently, Saldanha Bay generally has fewer occurrences due to the bay's specific water movement.

Safety Measures:
Local oyster farmers and officials conduct daily tests during red tides. Harvesting is halted instantly if biotoxin levels exceed safe levels.
