Mustard Pepper Leg Roast

1 x Leg of Lamb
3-4 garlic cloves
1 k**b ginger
2 green chilli, sliced
1 tsp green ginger garlic masala
1/2 cup crushed fried onions
Salt, to taste
1 tsp cumin powder
1 tsp coriander powder
4-5 cloves
1/2 tsp sichuan peppercorns
2 tsp black pepper
2 tsp mustard seeds
1/4 cup vinegar
1/4 cup oil
2 tblsp ghee
1 onion
1/2 cup water
250ml cream

One of my most favourite easy recipes to make is this one, and trust me, no matter what other one you try, this is THEEEEE one that comes closest.

How can a recipe THIS simple be so good? I honestly don’t know BUT it just is! Some things don’t need to be complicated, they are just right at its simplest.

Easy Mochachos chicken burgers by

Marinate 4 butterflied chicken fillets (tenderise them to even out the thickness) with garlic and salt, leave for a few hours or overnight.

Get your burger things ready, onion, lettuce, mayo, cheese, tomato, nachos, guac, anything you like.

When it’s time to make your burgers, fire up the grill or a cast iron skillet, drizzle with some oil and place your fillets down. Let it turn colour, flip then start sprinkling with your dry Mochachos spice.

I use the one but you can also use the one or any other dry spice you like.

Drizzle with a little oil, turn over and sprinkle again.

Assemble your burger and TRUST me….this is the one!

Chicken Fries / Sticks by

1kg chicken mince
1/2 cup mashed potatoes
1 tsp salt
1/2 tsp white pepper
1 tsp crushed green chilli
1 tsp onion powder
1 tsp crushed garlic
1 tsp lemon pepper
1 egg
2-3 tblsp oil (to drizzle)

Wet mixture:
1/2 cup flour
1/2 cup water (plus 2 tblsp if too thick)

Dry mixture:
1-2 cups breadcrumbs

Stuffed Prawn Pasta Shells by

750g deveined & deshelled prawns, cut into pieces (sub any other protein you prefer)
3 tblsp peri peri oil (recipe in my book Damn Good Food by Fehmz)
1 pack Conchiglioni pasta, boiled al dente and cooled.
30g garlic butter
Salt, to taste
1/2 tsp Black pepper
1 tsp lemon pepper
1 tsp paprika (smoked if possible)
1 heaped tsp crushed green chilli
2 large cloves garlic (4 small)
2 lemons, zest and juice
1 prawn/seafood stock (optional)
350ml pasta water
3 tblsp all purpose flour
300-400ml coconut cream
600ml fresh/double cream (use 200ml during cooking and the balance at the end)
2 cups mozzarella cheese (approx 250g)
2 cups yellow cheese (approx 220g)
Spring onion
Coriander
Parsley

Prepare according to the video. To bake, preheat your oven to 170degC, bake covered for 15-20 minutes, then take off the foil and finish baking until cheese is slightly toasty and melted (approx 7mins)
