Apple & Orange Cake with Citrus Syrup and a
Sweet Glaze
A soft, fragrant cake filled with fresh apples and orange, soaked with warm citrus syrup and finished with a smooth sweet glaze.
Ingredients
Cake
• 4 apples, peeled and sliced
• 1 orange (juice and zest)
• 3 cups flour
• 4 medium eggs
• 1 cup sugar
• ⅓ cup Greek yogurt
• ½ cup butter, melted
• 1 tablespoon baking powder
• Icing sugar for dusting
Orange Syrup
• 1 cup fresh orange juice
• ½ cup sugar
• 1 teaspoon orange zest (optional)
• 1–2 tablespoons butter (optional)
Sweet Glaze
• 1 cup icing sugar
• 2 tablespoons butter, melted
• 4 tablespoons milk
Method
1. Preheat oven to 175°C and grease a 20 cm cake tin.
2. Melt the butter and allow it to cool slightly.
3. Slice 3 apples thinly and place them in a bowl with the orange juice and zest. Keep the remaining apple for decorating the top.
4. Beat the eggs and sugar until light and fluffy.
5. Add the melted butter and Greek yogurt and mix well.
6. Fold in the flour and baking powder until combined.
7. Add the orange-coated apple slices to the batter and mix gently.
8. Pour the batter into the prepared cake tin.
9. Slice the remaining apple and arrange on top of the cake.
10. Bake for approximately 60–70 minutes or until a skewer comes out clean.
Orange Syrup
1. While the cake bakes, combine the orange juice, sugar, orange zest, and butter in a small saucepan.
2. Simmer gently for 5–8 minutes until slightly syrupy.
3. As soon as the cake comes out of the oven, poke small holes all over the top using a skewer or fork.
4. Slowly pour the warm syrup over the hot cake and allow it to soak in.
Sweet Glaze
1. Mix the icing sugar, melted butter, and milk until smooth.
2. Adjust consistency if needed:
• Add a little milk if too thick.
• Add extra icing sugar if too thin.
3. Once the cake has cooled slightly and absorbed the syrup, drizzle the glaze over the top.
4. Allow the glaze to set before serving.
