ANNOUNCEMENT: I have scratch-and-dent bottles of 350ml dhanya chutney for sale at my premises at Unit 2, RKA Industrial Park, 4 Bedford Street, Korsten, Gqeberha (down the road from Plascon Paints). The product is perfect and the best before date is April 2027. The bottles are deformed due to an accident in transit. They are priced at R40 per bottle, for collection only. For those of you who prefer to fight the winter chills differently, here are a few delicious ways to put that bottle of Quality Pickles Peri-Peri Sauce (Mild, Hot and XHot) to work. Please remember that all ingredients may be adjusted to taste and heat tolerance levels. 🥵

​1. Flame-Grilled Peri-Peri Chicken (The Classic)

​The absolute best use for a South African style peri-peri sauce is a proper spatchcock chicken on the braai (or in a very hot oven).

​How to do it: Spatchcock a whole chicken (or use chicken pieces). Poke a few shallow holes in the meat so the flavor penetrates. Marinate the chicken in a mix of 1 cup of the peri-peri sauce, a splash of olive oil, a squeeze of fresh lemon juice, and a couple of smashed garlic cloves.

​Cooking: Marinate overnight, then braai over medium-hot coals (or roast at 200°C). Baste with extra sauce frequently during the last 10 minutes of cooking for that perfect, sticky, charred finish.

​2. Peri-Peri Chicken Livers (Restaurant Style)

​A staple starter that is incredibly quick and easy to make at home.

​How to do it: Clean 500g of chicken livers and pat them dry. Sauté a finely chopped onion and some garlic in butter and a splash of oil until soft. Turn up the heat, add the livers, and sear them quickly so they stay tender inside.

​The Sauce: Pour in about 1/2 to 3/4 cup of your peri-peri sauce and a splash of fresh cream (to smooth out the texture and slightly mellow the heat). Let it simmer for a couple of minutes until the sauce thickens. Serve piping hot with a crusty Portuguese roll to mop up the gravy.

​3. Creamy Peri-Peri Prawns

​Bring the Mozambican coast to your kitchen with a fast, high-heat prawn dish.

​How to do it: Melt a generous chunk of butter in a large pan with a splash of oil (to keep the butter from burning) and plenty of minced garlic. Toss in cleaned, de-veined prawns (shells on or off) and fry until they just start to turn pink.

​The Sauce: Pour in a healthy dose of the peri-peri sauce and a squeeze of lemon juice. Toss everything together for another minute until the prawns are cooked through and coated in a glossy, spicy sauce. Serve over savory rice or with chips.

​4. Spicy Peri-Peri Trinchado

​A rich, saucy Portuguese beef stew that is perfect for a cozy dinner.

​How to do it: Cubed rump steak are flash-fried in a very hot pan with garlic, bay leaves, and a touch of paprika, then removed.

​The Sauce: In the same pan, reduce the heat, add a splash of white wine or beef stock to deglaze, and stir in a few tablespoons of your peri-peri sauce. Return the meat to the pan, coat it nicely in the reduced sauce, and serve with cubes of fried potatoes or fresh bread.

​Quick Flavor Hacks:

​Spicy Mayo: Mix a tablespoon of the sauce into regular mayonnaise to make an incredible spread for burgers, prego rolls, or a dipping sauce for chips.

​Wing Toss: Bake or fry chicken wings until crispy, then toss them in a bowl with a mix of this peri-peri sauce and a little melted butter.
