Mzansi's Lean Green Spinach Soup 🍃

This bowl of goodness is perfect for keeping things light yet lekker, with just 35 kCal per serving. Packed with nutrients and a dash of South African flavour, it’s a soup that’ll make you feel as fresh as a field of spinach!

Ingredients: Serves 2

2 cups fresh spinach leaves, chopped (about 100g)
1 medium onion, finely chopped
1 small potato, peeled and cubed
500 ml low-sodium vegetable broth
1 clove garlic, minced
1 tsp olive oil (just a drizzle—think light!)
Salt and black pepper, to taste
Fresh lemon juice, a squeeze for zestiness

Method:

Get the pot going: In a medium saucepan, heat that tiny splash of olive oil on low, enough to give the pan a little hug. Throw in the onion and garlic, and sauté until they’re golden and fragrant.

Add in the essentials: Toss in the chopped spinach and cubed potato. Let them mix and mingle for a minute or two, then add the veggie broth. Give it a gentle stir, and let it simmer on medium heat until the potato goes soft. (No one likes a crunchy surprise in soup!)

Blend it smooth: Once everything is tender, take it off the heat and let it cool slightly. Blend until smooth—imagine that velvety green finish.

Season with style: Add salt and pepper to taste. For that Mzansi twist, add a dash of lemon juice for zing.

Serve & savour: Pour into a bowl, garnish with a sprinkle of fresh herbs if you're feeling fancy, and enjoy!

Power Smoothie Recipe

Right, here’s a power-packed, energy-boosting smoothie to keep you going, whether you’re headed to the office or the gym. It’s full of all the good stuff, with a hint of humour – because who said a smoothie couldn’t make you smile too?

Ingredients:
1 cup fresh spinach leaves (yes, you’re basically Popeye now)
1 ripe banana, peeled and sliced (no bruised bananas, hey!)
½ cup fresh or frozen berries (blueberries, strawberries – whatever’s in the freezer or on sale)
1 tablespoon chia seeds (if you want to feel extra healthy, it’s optional)
1 tablespoon honey (also optional, but why not add a bit of sweetness to life?)
½ cup plain Greek yoghurt (the thick, creamy kind – no cheating with the sweetened stuff)
½ cup unsweetened almond milk (because we’re all about balance)

Method:
Chuck your fresh spinach leaves into a blender. It’s green, but I promise, you won’t taste it – just trust the process.
Add the banana slices. Bananas are basically the glue holding this smoothie together.
Throw in those berries. Frozen ones are perfect if you're in a rush – no need to defrost.
If you’re feeling fancy, sprinkle in the chia seeds. They’ll make you feel like you’ve got your life together.
Drizzle the honey (or don’t – no judgement here if you skip it).
Next, in goes the Greek yoghurt, thick and glorious. This is where the magic happens.

Pour in the almond milk – just enough to make it blend, but not so much that it’s soup.

Blend until smooth – or until your patience runs out. Either way, it’ll taste lekker.

Pour into a glass, sip, and feel like you’re winning at life – because you are!
