1️⃣ Let them rest at room temperature for 20 minutes before cooking. This ensures even cooking from edge to center.
2️⃣ Start with high heat (220°C) for just 5 minutes to create a flavour-sealing crust before reducing to medium heat to finish.

BONUS TIP: For extra juiciness, especially for larger breasts, brine them in saltwater (2 tbsp salt in 4 cups water) for 30 minutes before cooking!
