Easy Malva Pudding

Pudding

1 cup (125 g) flour

1 tsp baking soda

Pinch of salt

1 large egg

¾ cup (150 g) sugar

1 tbsp apricot jam

1 tbsp melted butter

1 tsp vinegar

½ cup (120 ml) milk

Sauce

½ cup (120 ml) heavy/whipping cream

½ cup (100 g) sugar

¼ cup (60 g) butter

¼ cup (60 ml) hot water

1 tsp vanilla extract

Method

1. Heat oven to 180°C / 350°F and grease a medium baking dish.

2. Beat the egg and sugar until pale and fluffy. Mix in the apricot jam and melted butter.

3. Sift together flour, baking soda and salt. Add to the egg mixture alternately with the milk. Stir in the vinegar.

4. Pour into the dish and bake for 30–40 minutes, until golden and a skewer comes out clean.

5. Meanwhile, gently heat all the sauce ingredients until the sugar and butter have dissolved.

6. As soon as the pudding comes out of the oven, poke a few holes in it and slowly pour the warm sauce over the hot pudding. Give it 10–15 minutes to soak ,serve warm with ice cream or custard 🍮
