Compound butters (or beurres composés, if we’re being fancy) are the ultimate culinary cheat code. 🧈✨They take five minutes to make, look incredibly impressive, and instantly elevate everything from a grilled steak to a morning waffle.

Blueberry, Honey, Sea Salt & Thyme (with Edible Flowers) 🫐🍯
Perfect for: Pancakes, waffles, fresh scones or a weekend brunch board.

Pro Tip: To prevent the fresh blueberries from making the butter watery, we do a quick reduction first to concentrate the flavour and colour.

Ingredients
150g of high-quality unsalted butter, softened to room temperature
1/3 cup fresh blueberries
1.5 tbsp honey (divided)
1 tsp fresh thyme leaves (gently bruised to release oils)
1/2 tsp flaky sea salt (like Maldon)
A handful of fresh edible flowers (pansies or violas), stems removed

Instructions
Make the reduction: In a small saucepan over medium heat, combine the blueberries and 1/2 tablespoon of honey. Cook for 5–7 minutes, mashing the berries with a fork, until they burst and thicken into a jam-like consistency. Remove from heat and let it cool completely.
Mix the base: In a bowl, whip the softened butter with the remaining 1 tablespoon of honey, fresh thyme leaves, and flaky sea salt.
The Marble Effect: Gently fold in the cooled blueberry reduction. Don’t overmix—you want beautiful purple streaks running through the butter.
The Floral Finish: Place a sheet of plastic wrap or parchment paper on your counter. Scatter the edible flowers face-down on the wrap. Spoon the butter mixture directly over the flowers. As you roll the butter into a log, the flowers will press beautifully into the outer surface.

Miso, Date, Spring Onion & Black Sesame
Perfect for: Charred broccoli, roasted sweet potatoes, grilled salmon, or a bowl of hot steamed rice.

Ingredients
150g of high-quality unsalted butter, softened to room temperature
1.5 tbsp white (shiro) miso paste
2 dates, pitted and very finely minced into a paste-like consistency
1 spring onion (scallion), green part only, very thinly sliced
1 tbsp toasted black sesame seeds

Instructions
Start by mashing the miso paste into the softened butter until completely smooth and homogenous.
Fold in the finely minced dates, ensuring they are evenly distributed throughout the butter.
Gently stir in the sliced spring onions and black sesame seeds until well combined.

Lemon, Herb & Garlic Butter 🍋🌿
Perfect for: Steaks, roasted chicken, seafood, or just slathered on a warm baguette.

Ingredients
150g of high-quality unsalted butter, softened to room temperature
1 large clove garlic, finely grated or minced (adjust to taste)
Zest of 1 medium lemon
2 tbsp finely chopped fresh herbs (a mix of parsley, chives, and a little rosemary or thyme works beautifully, but use what you have!)
1/2 tsp fine sea salt
Freshly cracked black pepper, to taste
Instructions

In a small bowl, use a fork or spatula to mash the softened butter until completely smooth.
Add the grated garlic, lemon zest, lemon juice, chopped herbs, salt, and pepper.
Mix vigorously until combined.

How to Shape and Store Your Butter
Once mixed, spoon your butter onto a sheet of parchment paper or plastic wrap. Shape it roughly into a log, roll it up tightly, and twist the ends like a candy wrapper to compress it.

Fridge: Chill for at least 2 hours before slicing. It will keep for up to 2 weeks.
Freezer: Wrap the log in an extra layer of foil. It freezes beautifully for up to 3 months—just slice off a coin whenever you need a flavour boost.
