Paneer ( or Tofu )

It’s the Indian Green Eggs ... loaded with veggies and flavor.

You use crumbled Paneer or tofu . You can play around the the spices and veggies included.

My Tofu Scramble:

Coconut oil
1/2 tsp each Jeera and mustard seeds
3/4 tsp Fennel seeds ( somph)
1 Finely chopped onion
Finely chopped veggies ( any you have on hand )
Green masala ( garlic and green chilli )
Ginger ( optional)
Curry leaf
Methi leaves ( fresh would be great ... but the dry version works well and does the job equally well)
Dry spices ( Hurdee , dhania and jeera powder)
Crumbled tofu / paneer
Spring onion chopped
Coriander
Freshly chopped chili

1. Heat oil and add seeds - allow to splatter
2. Add veggies- allow to sweat - add methi ( fenugreek) and green masala - allow to sizzle
3. Add dry spices and season
4. Crumble tofu and incorporate
5. Garnish with fresh greens

You can mix it up by adding different veggies! I enjoy it with a crispy Roti to add a crunchy texture. The kids love it in a croissant or a sourdough toast.

It’s a great filling meal - any time of day !

Stuffed peperito ~ Indian style ( Peas and Panner )

The Filling:

Roughly crushed & whole Peas
Crumbled Paneer
Chopped coriander , mint and spring onion
Chopped green chili
Crushed green masala ( masala)
Salt , crushed fennel & coriander & cumin seeds
Lemon zest

Incorporate everything together.

Slit peppers - midway lengthwise🌶️
Stuff . reserve a bit of filling to add at end
Pan fry on medium heat and allow to griddle on all sides
Optional ~ Add sliced onions, wedges of lemon , Green chilli and curry leaves ~ all to soften . Turn stuffed peppers to ensure cooked in all sides .sprinkle with remaining filling and garnish with fresh dhania.

Enjoy with Chapati

Moong Reset …. Simple Khichari( Khichdi)

Nothing like a Monday to make amends for a naughty eating weekend or just to get back to simple eating.

Nothing can be better for you or your digestion than a bowl of simple Moong Dhal khichari .

Kitchari is a combination of rice and dhal cooked together and finished off with a simple ghee tadka . The combination of ghee and spices make this very easy on the tummy - the original soul food!

1 cup rice
3/4 cup yellow split Moong dhal
Stick of cinnamon
Ginger
Salt
Hurdee

Boil / pressure cook until soft .
In a pressure cooker takes 20min

Tadka / Vagar / Braise :

Basics:

1 big tbsp Ghee
1 tsp Cumin seeds
Hing (asofetida )

Optional extra- adds to the yum factor
Dry red chili
Curry leaves
2/3 cloves garlic

Heat a little pan , add ghee then spices allow to splutter.
Add the hot braise to the hot khichari
Eat and enjoy! Great with green dhania-mint chutney or a pickle.

If you recovering from illness or tummy problems- eat plain for best benefit
Add your choice of veggies or serve on the side for a complete meal !
Other great combinations are yoghurt or even sev ( any crispy Farsan/ Papad )

Pimp my Potato Salad … When 2 families merge

The was a great hit this holiday and was made at each of the family gatherings post our Kruger trip … it’s Yumlicious

In a big bowl Chop :

Sliced Red onions
Chopped gherkins
Chopped parsley and dhania and chives
Sour cream and dollop mayo or good squeeze of lemon , Dijon mustard (optional)
Temper spices : red chili, mustard and sesame seeds and curry leaves
Lemon zest

Baby potatoes: boil / steam in salted water

Place in oven tray , Smash , salt / pepper butter and olive oil with herbs ( thyme/ rosemary or sage ) until crispy

Bake until golden brown on 180° for 20min /30 min . Remove from oven / air fryer.

Toss in chopped ingredients. Reserve some greens to garnish.

Oh so delicious… this is a combination of my Poowa’s ( Foi ) OG sour cream potato salad and my Sister in laws yummy creation .

Apple , Fennel and Cucumber Slaw ! The side you none you needed - a simple salad that zings with freshness and flavor.

You’ll need :

Finely chopped fennel
Julienne sliced Green apple 🍏 ( I prefer Granny Smith or Pink Lady for this)
Julienne sliced cucumber
Few fennel fronds
Mint leaves
Dressing *( any simple vinaigrette will do )

Optional extras :
Feta
Walnuts/pecan

The Dressing:

3 tbsp rice vinegar or lemon juice
2 tbsp olive oil
Salt
Pepper
1/4 tsp mustard powder ( or Dijon)
1tsp honey

Put it all in a bottle and shake !
Stores well in fridge… triple up so you always have it on hand !

A big bowl of Yum … Cous Cous & Co. One of the 3 most requested recipes from my sister’s post our Family Trip in Kruger .

Cous Cous & Roast Veg :

Elements ~

Cous Cous
Roast vegetables
Add in Chana & feta
Extra ~ pan fried halloumi
Fresh chopped herbs ( pesto or green chutney)

Optional: yoghurt dressing

Roast Veggies:

Chop veggies according to cooking times ~ can use any of your favorite vegetables ( small cubes for butternut )

Butternut
Brinjol
Peppers
Cherry Tomatoes
Marrow

( carrots / red onion also go well )

Season with salt , black pepper, red chili flakes, crushed garlic, thyme & oregano
Drizzle with olive oil
Bake on high heat ( 190°) for 20 min
Once tender ~ add Chana and feta blocks and grill for around 7 min ( to char slightly)

Meantime prep couscous ( as per box instructions)

Chop coriander, tear mint leaves
Chop green chili
Zest lemon

Add into Cous Cous

If using halloumi- pan fry separately ~ a nice extra touch is to add a sweet chilli or drizzle honey and chilli flakes at end of fry ( panfry in non stick pan - no oil - must be hot - place halloumi- flip once browned)

Toss everything together. You can add a pesto or a green chutney for extra zing

Yoghurt dressing: salt , mayo , lemon, chopped dhania - thin out with water ~ dollop when serving
