Time to get sophisticated in the kitchen! 🍲🍷

Who says farm cooking can't be fancy? Today we are trying something truly special from the Marie: Karoomanna cookbook. We are cooking up Elise se Beesstert (Oxtail) using a wonderful recipe from Elise Moolman, a beloved member of our community! 🏑✨

This slow-cooked, rich, and comforting oxtail is the perfect hearty dish to share with family. Check out the full recipe below and try it out for yourself! πŸ‘‡

πŸ“– Elise se Beesstert (Lewer 6–8 porsies)
BESTANDDELE:
2 beessterte (Oxtail)

Koekmeel (genoeg om die beessterte te bestrooi)

Sout en grofgemaalde peper na smaak

1 e olie

4 uie, fyngekap

6 selderystingels, in 2 cm-stukkies gesny

1 x 410 g-blikkie tamatie-en-uiemengsel

1 k beesvleisaftreksel

1 k droΓ« witwyn (rooiwyn kan ook gebruik word)

4 e suurlemoensap

4 t bruinsuiker

1 t droΓ« basiliekruid

Β½ t tiemie

6 wortels, in wiele gesny

10 baba-aartappels

8 pekeluitjies

METODE:
Voorverhit die oond tot 140Β°C.

Bestrooi die vleis met koekmeel en geur met sout en peper.

Braai die beessterte in olie tot goudbruin buite, maar nog rou binne.

Voeg die ui en seldery by en braai tot goudbruin.

Voeg die tamatie-en-uiemengsel, beesvleisaftreksel, wyn, suurlemoensap, suiker en kruie by.

Geur met sout en peper.

Bedek met 'n deksel en bak in die oond vir 4 uur.

Voeg die wortels, aartappels en pekeluitjies by en bak vir nog 1 uur of tot sag met die deksel op.

The Secret to the Perfect Slow-Cooked Brisket! πŸ₯©πŸ”₯

Nothing compares to honest, slow-cooked goodness! We are prepping a beautiful brisket with a gorgeous layer of yellow fat, getting it ready for a long, slow roast in the Aga stove.

To bring out the absolute best flavour, we are seasoning it with a special smoked salt and a perfectly balanced salt and pepper blend made by some incredible, salt-of-the-earth people from the Kalahari. After a quick stint in a hot oven to caramelize, it gets basted with a rich vinegar and Worcestershire sauce mixture, covered in foil, and left to slow-cook to melt-in-your-mouth perfection.
