Sweet potato chilli cheese fries.

500g Mince
Half onion
3 medium tomatoes(grated)
2 tablespoons sugar
Fresh garlic
Fresh thyme
1 teaspoon Garlic and herb spice
2 tablespoon Gajun spice
Chilli(no limit🙈)
Salt and pepper
Sweet potatoes(wedges)
2 tablespoons Vegetable spice
Cheese

1. Brown the meat
2. Add onion and garlic, cook for 10 min
3. Add tomatoes,spices, chilli and the sugar. Cook for 35 to 40 minutes
4. In bowl mix sweet potato, vegetable spice and a little oil. Coat well
5. Roast sweet potato still tender
6. Add the mince to the sweet potato and spread grated cheese on top
7. Put back in the oven, cook till the cheese is melted.

Buttermilk biscuits recipe:
- 5 cups cake flour
- 250g Rama(very cold)
- 1/2 cup sugar
- 5 teaspoons baking powder
- 500ml buttermilk (very cold)
- 1 teaspoon vanilla essence
- 1/2 teaspoons lemon essence
- 2 eggs (cold)
- 11/2 cups raisins(optional)
- 2 tablespoons caramel

1. Pre heat oven 2OO°
2. Combine flour, sugar, baking powder and mix well.
3. Add the butter and use the rub in method until the mixture resembles crumbs. Add the raisins and mix well.
4. Mix together the wet(buttermilk ,caramel, essence and eggs) ingredients. Leave a little for egg wash
5. Add the wet ingredients into the dry ingredients. Don’t over mix the dough
6. Lightly flour the work surface and roll the dough into 2cm thickness. Cut with a cookie cutter
7. Brush the top with egg wash and bake for 15min to 20min

Always use cold butter and buttermilk
