FEATURE ➡️ It was such an honor to join the lovely and beautiful hosts of Our Voices on VOA Africa to chat about all things Christmas and African traditions.

🌍 We shared thoughts and experiences on how Christmas is/was celebrated in our home countries as well as throughout the African diaspora.

🌟 The set was decorated with pieces from my travels throughout Africa, from Côte d'Ivoire, Sénégal, Rwanda, Zambia, and Kenya.

😋 We devoured some Attiéké + Grilled Red Snapper, which were divine.

🤎 The best part of it all was gaining big sisters through this experience, who showed me nothing but love, respect, and encouragement.

😆 Also, mom is going to kill me because I put her business on blast!

CRAB CAKES ➡️ Sundays after church were always an adventure while growing up with my mother in Abidjan, Côte d'Ivoire. The afternoon was completed with lunch at a restaurant in Plateau (downtown, business district) or simply a trip to Bassam (the beach), where we spent the rest of the day.

Bassam was more exciting, I mean who does not like going to the beach? The cherry on the icing was devouring fresh seafood and/or meats which were grilled and served with Attiéké (ground cassava) or Alloko (Fried Plantains). You can see where my love for seafood and eating out stems from, needless to say I love ALL seafood.

I had some Phillips Seafood crab meat leftover from last night's dinner and decided to make some crab cakes to pair with a light salad. The cakes are also stuffed with pieces of bacon and sautéed shrimp. They smell so good and of course, they taste marvelous too. I cooked them.

THE FINALE ➡️ Creamy Linguine and Stuffed Salmon w/ Lump Crab Meat, Shrimp + Bacon.

Garnished with Sautéed Mushrooms, Bell Peppers and Fresh Cilantro.

Terence and I are STUFFED!

My creamy sauce needs a little tweaking but overall, it was a GREAT meal!

IRISH SODA BREAD FRENCH TOAST ➡️ It is Love weekend and there is no better way to make your loved one(s) feel special with my Irish Soda Bread Frech Toast recipe, built and created during my IG live this A.M.

The batter contains Amarula cream liqueur + Ron Centenario Costa Rican Rum to take it up a notch! 🥃

GROUNDNUT SOUP ➡️ Have you had dinner yet? If not, I am so sorry. I didn't mean to tantalize your taste buds with my Groundnut Soup also known as Sauce Arachide in French.

Groundnut Soup is a staple in West African cuisine and not only is it commonly eaten with white rice but it is also so very delicious with Foutou, one of the Ivorian variations of Fufu.

And please do not get me started on the !

Foutou is a mix of pounded boiled plantains and cassava and looks yellow-ish in color.

So, I am going to just drop this gist and mouth-watering shots here and keep moving. I can already imagine your comments!

🌍 THROWBACK ➡️ Latitude 15 is a trendy and beautiful hotel in the heart of Lusaka, Zambia. Through my work in International Development, I was fortunate to visit this East African nation in the summer of 2019.

Phoebe Michelle had previously lived in Lusaka and strongly recommended I put Latitude 15 on my to do list (food and spa) in Zambia.

It is a visual experience from the moment you walk in, admiring the architectural design, unique décor and the flow of each area of this hotel. The bar area opens up to pilars with ushering views of the pool. I must add, customer service was TOP NOTCH!

Conjite Rad (in video), myself and a few more colleagues had dinner there one evening and we were blown away by the Tiramisu.

The next day or two, before getting on our late night flight to Dubai, we enjoyed an outstanding spa day at Lilayi followed by an amazing spread of delicious food including another serving of the tiramisu by the heated pool.

It was thee best Tiramisu we've both had, EVER! I slowly savored each and every bite of this dessert. It was the perfect finale to end our stay in Lusaka.

With Valentine’s Day around the corner, my Crêpe recipe might be just the breakfast/dessert fix you need to whip up for your sweetie, your bae, your husbae, your boo on this special day!

It is so simple and easy to follow. There is nothing wrong with getting a little creative by decorating them with the berries of your choice, a little whipped cream and Chocolate or Caramel sauce on the side.

The finale: Make it snow by dusting a little Confectioners' (powdered) Sugar on top! ❤
