Check it out❗ 🍲 Impwa Mixed with Okra recipe!!!!
Ingredients
- Fresh impwa (African eggplant)
- Fresh okra
- 1 onion (chopped)
- 1 green pepper (chopped)
- 2 tomatoes (chopped)
- Cooking oil
- Salt to taste

Method

1. Wash and cut the impwa and okra.
2. Fry the impwa separately until tender and set aside.
3. Fry the okra separately and set aside.
4. Heat a little oil, then fry the chopped onion until soft.
5. Add the green pepper and cook for 1–2 minutes.
6. Add the chopped tomatoes and cook until they form a rich sauce.
7. Add the fried impwa and okra to the sauce and mix gently.
8. Season with salt and simmer for 3–5 minutes.
9. Serve hot with nshima or rice.

🍟🥣 Fritters with Chips

Ingredients

For the Fritters

- 2 cups plain flour
- 1 tsp baking powder
- 2 tbsp sugar
- A pinch of salt
- 1 egg (optional)
- Water or milk (as needed)
- Cooking oil for frying

For the Chips

- 4–5 potatoes
- Cooking oil
- Salt to taste

Method

Fritters

1. In a bowl, mix the flour, baking powder, sugar, and salt.
2. Add the egg (if using) and gradually add water or milk to make a smooth, thick batter.
3. Heat oil over medium heat.
4. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
5. Remove and drain on paper towels.

Chips

1. Peel and slice the potatoes into chips.
2. Rinse and pat them dry.
3. Heat oil and fry the chips until golden brown and crispy.
4. Remove from the oil, drain excess oil, and season with salt.

Serve the warm fritters with crispy chips and enjoy! 🍟🥣
