This is the second part of the recipe, which focuses on the savory pulao kabab. Savour is a famous restaurant located on the Pindi-Peshawar road in Pakistan, and it is known for its scrumptious pulao. People from all over Pakistan travel to try its famous dishes.
Ingredients for bone broth:
750g, marrow bones (nali hadi)
1 litre of boiled water
1 tsp salt
1 medium-sized onion, chopped
2 inches, ginge,r chopped
1 tbsp salt to taster
1 tbsp coriander seeds
1 tsp, fennel seeds
1/2 tsp, black peppercorns
2 pods, green cardamoms
3 cloves
1 bay leaf
For Pulao Masala:
1 large onion, sliced
1 tbsp ginger garlic
4 pieces of green chillies
155ml, oil/ghee
1/2 tsp cumin seeds
1/2 tsp, black peppercorns
2 pieces, cinnamon sticks
1/2 pieces, star anise
2 bay leaves
3 cloves
3 pods of green cardamom
1/3 tsp, black cumin
1.25 tbsp,pulao masala
5-6 tbsp tomato puree
1 tsp red chilli powder
1/4 tsp, turmeric powder
1 tbsp, crushed coriander
1/3 tsp crushed black pepper
3-5, small green chillies
1 tbsp lemon juice
Other Ingredients:
600g,long grain basmati rice
4 cups of bone broth
Kababs as required
Far Salad Kachomar:
150g, homemade yogurt
1/3 tsp, crushed black pepper
1/4 tsp, red chili powder
Salt to taste
Chopped onion
Chopped tomato
Chopped green chilies
Chopped cucumber
Thinly sliced. cabbage
2-3 cloves garlic, chopped
