This is where cuts like the T-bone and Porterhouse come from; both are taken from the same section, with the only difference being the size of the tenderloin attached. Striploin on one side. Tenderloin on the other. Dry-ageing, the focus is simple: time, reduce moisture, and concentrate flavour. Once it’s ready, we trim it back and let the structure of the cut speak for itself.
