Most of the country's production occurs on natural pastures and grassland, which is why our beef is considered one of the best in the world. Argentina is also a leader in livestock sustainability in the region and has steadily reduced the amount of gas it emits over the last 30 years.

May 25th is a patriotic date in Argentina, and food is always part of the celebration. 🇦🇷

For this perfect match, we brought together two classics: knife-cut beef empanadas and sweet membrillo pastelito (quince pastry). Enjoy!

INSTRUCTIONS:

For the empanadas:

1️⃣ Finely dice the onion and cook in a cast iron skillet with oil until softened and translucent.

2️⃣ Cut the ribeye into small cubes and add to the onions.

3️⃣ Add the seasonings to the mixture (we used cumin, paprika, crushed red pepper, and salt).

4️⃣ Cook until the beef is fully cooked, then remove from the heat and let cool.

5️⃣ Once cooled, add chopped green onions and chopped hard-boiled eggs.

6️⃣ Fill the empanada discs with the mixture, seal well using a traditional repulgue fold or by pressing the edges with a fork.

7️⃣ Fry in oil at 180°C / 350°F until golden brown, then remove with a strainer or slotted spoon.

For the pastelitos:

1️⃣ Cut the dulce de membrillo (quince paste) into cubes and place on top of one pastry disc. Cover with another layer of dough, fold and seal the edges well, then fry until golden brown.

2️⃣ Remove and sprinkle with sugar.

3️⃣ Dulce de membrillo (quince paste) can usually be found in specialty grocery stores near the cheese section, or at Argentine and Latin markets.

"Churrasco with black beans and rice" is a staple Latin American meal. Add Argentine Outside Skirt Steak and Ducal Black Beans, and now you’re talking about the perfect match. 🔥

INGREDIENTS:

For the Steak:
2 lbs Argentine Outside Skirt Steak
2 Tbsp olive oil
2 Tbsp fresh lime juice
1 Tbsp red wine vinegar
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
Salt and pepper to taste

For the Chimichurri:
½ cup parsley, chopped
½ Tbsp minced shallot
½ Tbsp minced garlic
¾ cup olive oil
2 Tbsp red wine vinegar
2 Tbsp lime juice
½ tsp dried oregano
1 Tbsp crushed red pepper flakes
Salt and pepper to taste

For serving:
1 pouch Ducal Whole Black Beans
1 cup cooked white rice

INSTRUCTIONS:

1️⃣ Make the marinade: Add olive oil, lime juice, red wine vinegar, paprika, onion powder, garlic powder, cumin, salt and pepper in a large mixing bowl. Whisk to combine.

2️⃣ Pat Argentine Skirt Steak dry, then add to the marinade. Let sit at room temperature for 20 minutes to let flavors develop.

3️⃣ Preheat a cast-iron grill pan over medium high-heat for 3-5 minutes. Add vegetable oil to the pan and sear the marinated Argentine Skirt Steak for 3-5 minutes on each side or until an instant-read thermometer inserted into the thickest part reads 125–130°F. Rest the steak for 5-8 minutes, then slice thinly against the grain.

4️⃣ Make the Chimichurri: Add the parsley, minced shallot, minced garlic, olive oil, red wine vinegar, lime juice, oregano and red pepper flakes to a small bowl. Whisk to combine and season with salt and pepper to taste.

5️⃣ Prepare Ducal Whole Black Beans according to package instructions. Add to a serving ramekin and keep warm.

6️⃣ Plate the sliced Argentine Skirt Steak and top generously with chimichurri. Serve alongside cooked white rice, Ducal Whole Black Beans and extra chimichurri for dipping.
