In the Doctoral thesis of Dan Meyer on food chemistry and technology of mesquite flour, in taste panels, he found addition of 10 and 20% mesquite flour to tortilla corn chips had a greater flavor than corn chips without mesquite. Corn chips with 15% mesquite produced by a commercial Austin, Texas corn chip company were taste tested at the Kerrville Folk Festival and were very well liked. The flavors were described as slightly sweet with chocolate flavored notes. There were many requests as where to buy these chips. Due to the high antioxidant polyphenol content of mesquite flour that inhibits rancidity, these chips should have a longer shelf life.

This past week, I was indeed very fortunate enough to savor the culinary art of Elizabeth Johnson, owner of the Pharmtable Restaurant in San Antonio that used nondairy gluten free ingredients and incorporated Casa de Mesquite, mesquite bean flour into her creations. To encourage development of a regional industry where this raw material is being produced in Argentina, she incorporated mesquite flour into both corn tortillas and mesquite corn chips as they are widely consumed. She also flouted her culinary art with a chocolate mesquite cake, mesquite ice cream and a mesquite tahini cookie.
It was very uplifting to me to have her support in development of marketable products of families with very challenging financial resources in hot arid lands. I am so grateful to her, Scott McCormick of CH Guenther and my daughter Beth for sharing this incredible event.

Casa de Mesquite is very appreciative to Paul Wensel, Chef de Cuisine, at the Hestia Restaurant in Austin, Texas that was recently awarded a Michelin Star in becoming actively involved in creation of new mesquite delights. In addition to exploring chocolate tasting delights made from mesquite by Mezfoods https://mezfoods.com/ his pastry team has developed, a puff pastry (many fine layers) for a lovely cinnamon bun sprinkled with mesquite flour.
