WE LOVE FENNEL
Guess that could be the T-Shirt slogan for the day after we have tried out the avocado fennel cream.
Ingredients:
Fennel
Avocado
Garlic
Ginger
Honey
Tahine
Salt
Pepper
Lemon juice
Something green like parsley, coriander or dill
Roast the fennel, I would say a large one, in the oven, with olive oil, salt and pepper til tender.
In a bowl take an avocado, a Tbsp of tahine, a Tbsp of honey, juice of 1 lemon or lime, grated garlic and ginger, some salt.
When fennel ready mash all ingredients together with the hand blender.
You can add tofu or cream cheese, garlic, some parsley, dill or coriander, the last touches are up to you, maybe flake chillies, sesame seeds, your creation!
All we can say is that WE LOVE FENNEL today.
Note: if you are using tofu please boil it in water for about 10 min.
