Ingredients:
300g vegan chocolate, to melt
1/2 cup soy crisps
12 large vegan marshamallows, chopped in half
6 digestive biscuits, chopped
16 vegan berry lollies/jellies (I used blackcurrant and raspberry lollies)

Toppings:
peanuts
soy protein crisps
10 small vegan marshmallows

Instructions:
1. Melt the chocolate and mix in the rocky road ingredients.
2. Pour the mixture into a loaf tin lined with baking paper.
3. Add the toppings.
4. Place in the fridge for 40 minutes or until the chocolate has set.
5. Enjoy!

Ingredients:
1/2 cup each: pecans, cashews, peanuts, almonds and rice puffs.
1/4 cup pumpkin seeds.
1 tablespoon cashew butter.
1/3 cup maple syrup.

Instructions:
1. Preheat oven at 180 degrees Celsius for 15 minutes.
2. Mix everything together in a medium sized mixing bowl until well combined.
3. Pour into a baking tray lined with baking paper and flatten out the mixture as much as you can.
4. Place in the oven and cook for 25 minutes - turning half way.
5. Allow to cool down completely and then add to a jar/container and enjoy with dairy free yoghurt, on top of smoothie bowls or on its own.

All you need for these apricot balls:
200g dried apricots
3/4 cup desiccated coconut
2 tablespoons maple syrup
1/4 cup organic rolled oats
1/2 cup raw cashews, chopped

Instructions:
1. Soak the apricots in hot water for 10 minutes (skip this step if they are already soft)
2. Chop the apricots into small pieces.
3. Add the apricots and the remaining ingredients to your food processor.
4. Pulse until well combined.
5. Roll into balls.
Optional: roll in desiccated coconut.
6. Place on a tray lined with baking paper and place in the fridge.
7. Enjoy!

1/2 cup mini marshmallows
1/3 cup peanuts
8 caramel Chocolate bites
3 pieces dark chocolate coconut bars, chopped

Instructions:
1. Melt the chocolate and mix in the biscuits, marshmallows, peanuts and caramel bites.
2. Pour the mixture into a loaf tin lined with baking paper and add the coconut bar pieces on top.
3. Place in the fridge for 40 minutes or until set.

All you need for the overnight oats:
2 cups rolled oats
1 cup frozen mixed berries
2 tablespoons maple syrup
2 tablespoons h**p seeds
2 cups soy milk
juice of 1/2 lemon

Toppings:
50g vegan chocolate (25g each jar)
Spoonful almond butter
Pepitas
Flaked almonds

Makes 2 jars/bowls 🫙🫙

Instructions:
1. Add 1 cup of rolled oats, 1 tablespoon h**p seeds and 1 tablespoon maple syrup to each jar.
2. Blend frozen mixed berries, lemon juice and soy milk until well combined.
3. Add the berry milk to the jars and mix well.
4. Place in the fridge for a minimum of 4 hours (or overnight)
5. Top with a spoonful of almond butter.
6. Melt the chocolate and drizzle over the top, then add pepitas and flaked almonds. Place back in the fridge for the chocolate to set.
7. Enjoy!
