You might have heard of Teh Tarik (pulled tea) if you've been to Malaysia β
It's made by "pulling" tea between two jugs to create a froth, while also cooling the tea down.
The Chai version I used to serve when we had a stall in the Central Markets used the same pulling technique.

INGREDIENTS for my Family's Chai
70g loose black tea leaves
30g warm spices; mixture of cloves, cardamom, cinnamon and fennel seeds
condensed milk
Plant-Based milk or dairy
water
METHOD
In a mortar and pestle pound all the spices roughly and add to the loose tea.
For a serving for one, add one cup of water and bring to boil.
Add 1 teaspoon of the loose tea and spice mix with 1 tea bag or 1 teaspoon of loose tea.
Bring it to boil and simmer for roughly a few minutes. Now add milk of your choice till the tea colour changes to milky coffee.
In a jug or a mug add 2 teaspoons of condensed milk, then sieve it and pull between two mugs to create naturally delicious cup of Chai.
Give it a try... I promise you'll never go back to the packet stuff!
