A humble yet delicious Calabrian potato cake, creamy on the inside with a golden, crispy crust โ€” the perfect comfort food.

Made with freshly mashed potatoes, Tweedvale Traditional Milk and Tweedvale Cream for that rich, velvety texture. Itโ€™s also a beautiful way to reinvent leftover mash and turn it into something the whole family will love.

Long before Tweedvale was what it is today, it was just this, a family, a paddock full of cows, and two children tumbling around in the grass. ๐Ÿ„

Carlo had no idea back then that all of this would one day be his to carry forward and his sister Gabriella would be working with him on their marketing - both helping shape the story we share with you today.

That's the thing about family businesses, they're never really built by one generation. They're handed down, added to, and carried forward, one pair of hands after another. ๐Ÿค

You can follow the recipe but the real secret ingredient is the taste test. ๐Ÿฅ„

When cooking with his Nonna, Andrew would never serve it without her approval. Never trust a sauce until you've tasted it yourself, adjusting the salt, the acid, the balance, right up until the very last minute. No shortcuts, no guessing.

Our tip this week: taste as you go. Your palate is the best tool in the kitchen. ๐Ÿ

This is one of those beautiful family recipes that has been passed down through generations. Itโ€™s our Great Zia Maria's recipe, our Nonnas' sister's recipe and one that has always been loved by her children and grandchildren.

Itโ€™s still enjoyed regularly around the big family dinner table, just as it has been for years. Simple, rustic and traditionally Calabrian, Pasta Piselli is a wonderful example of how a handful of humble ingredients can make the most comforting meal.

Sweet peas simmered with tomato, onion, garlic and basil, tossed through pasta and finished with freshly grated Parmesan and a drizzle of extra virgin olive oil. ๐Ÿ‡ฎ๐Ÿ‡น

Itโ€™s also a delicious way to incorporate plenty of peas into a pasta dish and one that the whole family will enjoy.
