I bought these mini butternuts (teaspoon for size) at the farmers market this weekend. We are having roast chicken and I think it will be a nice healthy side. What do you think is the best way to prepare them? Cut in half and roast or diced with other veg to get more veg on our plates? Please share your go to butternut recipe.
