This Saturday, join us as we taste through the new releases from Minim, the project of Tim Sproal out of Castlemaine in Central Victoria. Tim never planned on becoming a winemaker, no formal training, no famous European harvests. He studied geology, fell hard for cooking, and only really clicked with wine at a dinner in 2010 where a few vivid, textural bottles tied it all together. His first release came in 2011: a weird, faulty, lovely Shiraz Grenache made in a milk vat under a tree. Something small and real had started.
Since 2019 he’s been growing grapes on two of his own vineyards in Metcalfe, going deeper into regenerative farming every season.
Today he makes small wines from great Central Victorian sites, native ferments, mostly aged in old casks. I’ve watched these evolve for years—they began in that edgier natural space, fun and vibrant with a few faults, and have since shed the harsher edges for real purity and confidence, his love of Sangiovese shining through more each vintage. Still fun and affordable, but now bottles I can happily recommend to just about anyone after something lively to drink with food.
