WEEKLY RECIPE🍷
Prawn Cocktail with Citrus Slaw paired with Château d'Esclans Whispering Angel Rosé.

Fresh prawns, crisp citrus slaw and a creamy dressing make this the perfect winter rosé pairing. The sweetness of the prawns and bright citrus notes lift the wine’s delicate fruit profile, while the crunchy slaw keeps everything feeling vibrant and refreshing.

Serves: 4
Prep time: 20 mins
Cook time: 5 mins

INGREDIENTS
200g cooked prawns, peeled
2 cups finely shredded cabbage
1 fennel bulb, thinly sliced
1 pink grapefruit, segmented
1 orange, segmented
Small handful dill
Dressing:
½ cup mayonnaise
2 tbsp tomato sauce
1 tbsp lemon juice
1 tsp horseradish
Salt and black pepper

METHOD
Combine cabbage, fennel, citrus segments and dill in a bowl.
Whisk together mayonnaise, tomato sauce, lemon juice and horseradish.
Toss prawns through half the dressing.
Arrange citrus slaw onto plates and top with prawns.
Spoon over the remaining dressing and serve immediately.

Looking for the perfect cold weather pairing? Look no further than Domaine AC Bourgogne Rouge. Transparent cherry red in appearance. Alluring aromatics, slightly floral (rose, iris), red and Morello cherry, wild strawberry, touch of earthy complexity. Light to medium bodied, dry and savoury, lovely svelte texture that caresses the tongue. Bright red fruits to the fore, moving more savoury on the mid-palate. Balance and harmony are the bywords here.
