Did you know we have 3 delicious curry mixes ……. But used also as a spice rub gives a fabulous flavour to meats or vegetables - especially on the Bbq …… simply rub into choice with a little olive oil and pan fry, roast or bbq. Think butter chicken sweet potato ….. curry madras lamb cutlets …..and korma chicken drumsticks … easy mid week options to spice up your meals 👍

Vietnamese chicken w lime leaf

1kg chicken thigh - bone in and skin on is extra delish

2T chopped garlic
1 chopped piece lemongrass stick
3T turmeric
2T fish sauce
Lime leaf x 10 (dried or fresh)
1 t Cumin
1 t Chinese five spice
1 t Chilli flakes
Salt and pepper
2 t brown sugar ( optional)

This is a stunning simple dish that marinade can be made in advance. Once you put all
In a bowl it’s very quick and easy. Basically mix all the ingredients together, then add chicken pieces, let marinate if you wish or not - then pan fry to get some char and then pop into a tray and finish in oven.

Serve with shallots, or coriander or as is ! Rice, noodles to suit.

Can use on chicken pieces and skewer and bbq too !

Glazed ham is super easy ….

Chatting with friends the other day …. How easy to jazz up the Christmas ham. Simply cut back the layer of skin and fat …. Not needed. Score the ham in a check board cut. Add cloves or even stud with star anise too.

The glaze can be super simply from fridge / pantry

A jam or marmalade ….
Dijon mustard
Liquor eg sherry port grand marnier etc etc

Shake / mix up the glaze and then baste liberally - cook in med oven and keep basting

I like to give it a flash grill at end to crunch up the glaze

And remember the ham is already cooked so you are just finishing it … delish
