Koojedda Country

Koojedda Country Preservative, Additive and Gluten free produce. As organically grown as possible. I would like to present to you my seasonal collection of homemade preserves.

They are all preservative, additive and gluten free. The pectin used in the jam as a setting agent is made from lemons grown on Koojedda Country. Most of the fruit and vegetables used in these products are grown on Koojedda Country at Bakers Hill as close to organic as possible. The sugar content is far less than usual - just enough to preserve.

Blueberry & Apple Jam
Tomato Chutney
Olives about to go into brine
Quince paste about to cook all night in the slow cooker

Today I picked up Apples for whatever needs them plus Apple Sauce for personal use.
Picked up this years Extra Virgin Olive Oil for my infused Oils.

Plus I am in the middle of pruning Olive trees,
burning off other prunings and rubbish.
Redoing mulch and basically getting ready for spring, fertilising and tidying up.

Looking for a particular photo this morning and came across these.
Takes me back to doing these set ups each weekend at the last markets I was involved in.
So much fun trying to make it different but the same each weekend.
And then there was Christmas, Halloween Fathers Day, Mother’s Day, Easter and Paddington and his Orange Marmalade.
So much fun meeting so many people.

Driving through an orchard that has been harvested and lost all its leaves to autumn.
The next thing, all the trees will be coved with flowers.
Then it starts all over again.
I love the country side and all the changes. Nothing stays still.

πŸ«’ Olive Tapenade coming up - maybe.
I’ve not done that for a few years. I’m not flying in the dark this time thanks to the Olive Processing workshop I did with Concetta's Italian Cooking Experience. Thank you Concetta. I’ll be putting my new learnt knowledge into practise using my old recipe.

Finally this huge Protea is nearly open.
It is huge and heavy.
There are 11 buds on one bush and 7 on another of this variety. Still more King Whites to come.
I have no idea how the bush - no taller than my waist - can hold them so we will see.

A little road trip yesterday to pick up Green Tomatoes. My stock didn’t quite make it to this years growing season. So I am madly processing them before they start turning red.

Last year I planted 27 tomatoes bushes - mainly for Green Tomato Chutney and Green Tomato Pickle but we did get to eat some ourselves.

Green Tomato Pickle need to be done fresh to keep the crunch while Green Tomato Chutney can to frozen for later use.

GREEN TOMATO PICKLE is still available in various outlets. Plus Green Tomato Chutney.

By the way - on my road trip I did a little detour and picked up a few more different Protea bushes - as you do.

They do very nicely in our winter until frost time - if we get frosts. By then summer Tomatoes will be coming along.

πŸ… If you see them in Bunnings or elsewhere give them a go. I will seed save from this lot for next year.

πŸ‹ Lemonade (Citrus lemon x reticulata) - a cross between a Mandarin and a Lemon. First discovered in New Zealand in the 1980’s from a chance seedling found.

πŸ‹ Looks like a Lemon, low acid like a Mandarin and tastes like already made lemonade.
