Common Garage is finding its rhythm — not your standard operating hours, but something shaped by the space and the community.

Alice is open Wednesday–Saturday from 9am, and depending on the pop-ups, the Garage keeps evolving. If Alice is open, Two Blokes Coffee is on too.

Every week brings new faces, flavours, and reasons to drop in.

Here’s what’s on this week:
☕ ALICE (Coffee Trailer)
Wed–Sat | from 9am
Coffee, tea, spiders, sodas, jaffles & snacks.
Small trailer, big character — the anchor of the Garage.

🥐 WED | 2–6pm — Mrs Browne Bakes
Erika and Betty Blue bring the sweet stuff back midweek. A firm Wednesday favourite.

🍖 FRI NIGHT | 4–8pm — Timmo’s Slow Cooked
First Friday of every month. Slow-cooked meats & Creole flavours that do exactly what they should — bring people together.

🥧 SAT LUNCH | 11am–2pm — Freshly Baked By Josh
New energy, fresh bakes, and a welcome addition to the Garage rotation.

🥘 SAT NIGHT | 4–8pm — Cori Catering + The Paella Guy
Indigenous-inspired Italian meets live Spanish paella. Two chefs, two styles, one night.
Big thanks to Lilly from Bakehouse for helping shape our early Saturday lunches — we look forward to having her back when the timing’s right.

Alice the Coffee Trailer is open from 9am Wednesday to Saturday serving coffee, tea, spiders, soda pops, jaffles and snacks.

WEDNESDAY | 2PM - 6PM
Mrs Browne Bakes is back!

Erika Browne and Betty Blue have quickly become a Wednesday institution at the Garage, serving up the baked treats people keep coming back for.

FRIDAY NIGHT
Timmo’s Slow Cooked returns and officially becomes our FIRST FRIDAY OF THE MONTH resident.

Big flavours. Slow-cooked comfort food. Enough said.

SATURDAY LUNCH | 11AM - 2PM
Freshly Baked By Josh takes over Saturday lunches for the next two weeks.

And a huge thank you to Lilly from Bakehouse for helping make our launch phase so special. Her pastries, pies and Malaysian masterpieces quickly became a Garage favourite, and we’re sure we’ll see her back again soon.

SATURDAY NIGHT | 4PM - 8PM
Aaron from Cori Catering joins Common Garage favourite The Paella Guy.
Indigenous-inspired Italian food meets live-cooked Spanish paella.

Two chefs. Two unique food experiences. One very good Saturday night.

Alice the Coffee Trailer is now settling into the new daily trading rhythm at the Garage, with 9am starts Wednesday through Saturday as the space continues evolving into a bigger hub for food, coffee and community in Ballarat. Coffee, tea, spiders, soda pops, jaffles and snacks flowing from Alice into Black Hill. 

This week however, we will be taking a short break from the weekend evening events - a quick rest and reset as we build into a big winter roster of regulars and pop-ups!

This week’s opening hours:

Wednesday
9am - 1pm
and again from 2pm - 6pm for Mrs Browne Bakes and Hot Didely Dogs

Thursday
9am - 2pm

Friday
9am - 2pm

9am - 2pm
With Flying Chillies Bakehouse in from 11am-2pm

Closed Monday, Tuesday & Sunday.

Albeit a small roster, this week’s featured vendors are absolutely stacked with some of Ballarat’s best.

Wednesday from 2pm - 6pm
Mrs Browne Bakes returns with Betty Blue alongside Jason from Hot Didely Dogs for what is quickly becoming one of the best midweek food sessions in Ballarat.

Erika Browne continues proving why Mrs Browne Bakes has become such a local favourite, with warm baked treats, huge flavour and the kind of food that instantly feels comforting. And alongside her, Jason from Hot Didely Dogs returns serving the loaded hotdogs that people genuinely haven’t stopped talking about since his first appearance at the Garage.

And yes... the FIRST 30 customers at Mrs Browne Bakes will score a FREE cookie to celebrate Betty Blue’s new decals officially hitting the road 👀

Saturday from 11am - 2pm
Lilly from Flying Chillies Bakehouse returns with the pastries, pies and Malaysian masterpieces that have quickly become one of the most loved offerings to hit the Garage so far. Big flavour, incredible technique and baked goods that somehow disappear almost as quickly as they arrive.

The winter roster at Common Garage is continuing to grow, and we’re actively looking for more quality vendors, creators and popups to join the movement.

A slightly slower week at Common Garage... but even on a quieter week, the Garage somehow still ends up hosting absolute Ballarat royalty.

This week features two queens of the local food scene — Erika Browne from and Lilly Wright from Bakehouse — alongside the undisputed king of hotdogs himself, Jason from .

Wednesday from 2pm–6pm, Mrs Browne Bakes returns alongside Hot Didely Dogs for another huge midweek session at the Garage.

And this week is extra special...

Betty Blue will be arriving publicly for the FIRST time with her brand new decals officially on display 👀

To celebrate, the first 30 customers at Mrs Browne Bakes will score a FREE cookie.

Warm baked goods, loaded hotdogs, coffee, jaffles and good people at the Garage? That’s a pretty solid Wednesday.

Then Saturday from 11am–2pm, Lilly from Flying Chillies Bakehouse returns with the Southeast Asian-inspired pastries, pies and Malaysian masterpieces that have quickly built a cult following around the Garage.

This weekend we’re also taking a quick pause from the Friday and Saturday night sessions while we reset, recharge and prepare for a huge winter fixture coming very soon.

Weekend plans? Common Garage has you covered 🔥

Friday night — it’s FnC’s at the Garage, with Mr. Squidgy rolling in to deliver proper food truck fish and chips. Fresh seafood, golden crunch and exactly the kind of Friday night feed people have been chasing.

Saturday night then turns things all the way up as Desire Donuts joins Hammos Hoagies for a ridiculously good combo of loaded hoagies and next-level donuts.

Unfortunately Lilly from Flying Chillies Bakehouse won’t be able to make it this week, but she’ll be back on the 30th with all the incredible baked goods and Malaysian masterpieces everyone has fallen in love with.

And while we’re here... Wednesdays at the Garage are quickly becoming something special too, with Mrs Browne Bakes settling into her now weekly Wednesday spot with Betty Blue serving up fresh baked goodness and warm comfort food energy week after week. Keep an eye out for who will be joining her next week! Thanks to Hot Didely Dogs for some damn fine dogs last night!!

Sooooo excited that is making Common Garage her Wednesday home away from home! I’d be out and about too if I were showing off these brand-new wheels!

Mrs Browne’s Betty Blue will be at The Garage most Wednesdays! This week, she’ll be joined by our good friends who’ll also be back at The Garage for a second time!

Grateful to The West Vic Brolga for taking the time to tell this story.

Black Hill holds a deep sense of place in Ballarat’s story — not just for what it is, but for where it sits, and what has moved through it over time. On the road to Eureka, soldiers passed right by this corner. That detail anchors this building into something larger than itself — a landscape shaped by people, movement, and memory. Yet, that is just one of many stories born from and shaping this areas heritage.

Heritage here isn’t something distant or preserved behind glass. It’s lived. It’s shared. It’s the continuity of place and the people who give it meaning, across generations. Buildings matter most when they stay connected to that rhythm — when they remain part of the community, not separate from it.

For me personally, in a world of reactions, I wanted to respond — not with noise, but with something grounded in place, and in respect for the layers that sit here, and the many people across Ballarat who are doing the same kind of work in their own way.

There’s a lot of care in this city that doesn’t always make headlines, but is very present in the fabric of it.

This week’s Ballarat heritage focus is a reminder of how much meaning lives in the everyday life of this place — and how it’s not held by one person or one project, but carried collectively by many who continue to show up for it.

That’s the work. Quiet, ongoing, and shared.
