Back to cut up at the Hillier family in yackandandah. A shorthorn x Australia dairy a beautiful 18 month old steer with great marbling, this will keep those 4 hungry boys fed and ready for footy finals. How good is that!!
Was lucky enough to have my grandfather out working with me today, passing on some of his knowledge in process beef. With over 70 years experience he had plenty tricks to pass on. At the age 83 he was more than happy to skin out one side. Not many get the opportunity to learn from the best and to have it right at my door step is a blessing and treasure.

A beautiful 18 month wagyu cross steer we recently processed for mick at Riverina dairy in Corowa. The dairy milks 2600 cows a day, making it a very big busy dairy. The steer came up nice, beautiful and soft with some great marbling.

Wilby to chiltern and chiltern to mt beauty are just some of the places we traveled this week to fill freezers for some happy customers.
8 beautiful grain feed lambs for MJM equipment in Wilby. We b***d most of the shoulders out so the boys could have a go at making sausages themselves.
7 lambs for Jenna at Tallowwood Flower Farm Chiltern which filled her freezer to the brim, keeping her growing boys nice and full for a few months.
A beautiful Hereford heifer for the Ryder family in mt. Beauty, had plenty of cover with plenty of feed about.

8 beautiful lambs processed for Taylor Ag not many happy snaps. Site supervisor was happy to walk away with his 1kg of red frogs. Thank you to the Taylor family for the support, we will see you next time.

A warm but wet winter has meant there is plenty of grass which means cattle in prime conditions. Recently we processed a record breaking Angus steer for David and Kira Cheesley in the Indigo Valley. Lucky David has his own coolroom so we could lock him away for 2 weeks. David also processed 10 lambs earlier on which we frozen down the lamb trim to add to his beef trim to make plenty of snags.
With a marble score of 2+ he should eating great.
We never weighed him but you be the judge let us know how big you think he would have dressed out at???
