I’ve been making this ciabatta (aka sh*tty white bread, aka air bread, aka the first of its name) since the shop was purchased 3ish years ago.

Even after 3 years I can genuinely say , the effort to get it to there will never be known by the punter, but the anxiety it creates for me as it’s on its final proof, is somehow worth the result? 😵‍💫🤔😆🫡
