Tuesday means taco cups! Packed with protein from our Vegie Sausages and black beans, these come together quickly for an easy mid-week meal and are perfect for meal prep too.

Serves 3
Tortilla cups
6 mini wholegrain tortillas
3 tbsp water

Filling
10ml olive oil
300g Vegie Delights Plant-Based Vegie Sausages
1 tin black beans, drained & rinsed
2 tbsp (30g) taco seasoning
1 tbsp water

Tomato salsa
2 tomatoes, diced
Handful coriander, chopped
Juice of ½–1 lime
1 tsp maple syrup

To serve
Avocado, sliced
 
METHOD
1.  Preheat the oven to 180°C.
2. Mix the flour and water together until smooth.
3. Cut 4 small slits (~2 cm) around each tortilla. Lightly brush with the flour mixture, then fold and press into cup shapes. Place into a greased muffin tray or baking dish.
4. Bake tortilla cups for 8–10 minutes until lightly golden and holding their shape.
5. Meanwhile, heat a pan over medium-high heat. Slice the veggie sausages and cook until browned.
6. Add black beans, taco seasoning & 1 tbsp of water. Combine well and cook for a few minutes until heated through.
7. In a bowl, combine all salsa ingredients and mix well.
8. Spoon the filling into the tortilla cups.
9. Top with fresh tomato salsa and avocado.

DINNER HACK: Did you know you can make fried rice from scratch all in a rice cooker? ​You're welcome.

Serves 4 ​
INGREDIENTS
10ml extra virgin olive oil ​
300g Vegie Delights Plant-Based Vegie Sausages​

BASE ​
200g (1 cup) basmati rice, rinsed​
1 cup salt reduced vegetable stock​
1 onion ​
2 cups (250g) mixed frozen Vegetables (Carrots, Peas, Green Beans, Corn Kernels)​

​SAUCE ​
2 tbsp salt reduced soy sauce​
1 tbsp vegetarian oyster sauce ​
2 tbsp Chinese cooking wine​
2 tsp sesame oil​
½ tsp white pepper ​
5g ginger, minced​

METHOD
1. Add all BASE ingredients into the rice cooker.​
2. Then add all SAUCE ingredients.​
3. Mix well & place in the rice cooker. Select white rice setting.​
4. Whilst rice is cooking, pan fry sausages ​
5. When serving, sprinkle thinly sliced green onions over as a garnish.

Combat the winter blues with this iron-packed honey mustard protein salad, made using our Vegie Sausages 🥗​

Iron-Packed Honey Mustard Protein Salad​
Serves 3 ​
Salad​
225 g spinach ​
1 tin brown lentils, drained and rinsed​
300g Vegie Delights Plant-Based Vegie Sausages​
15ml extra virgin olive oil
12 cherry tomatoes, halved ​
150 g avocado, sliced​
​
Honey Mustard Dressing:​
1.5 tsp dijon ​
2 tbsp Greek yoghurt ​
15ml honey ​
2 tsp lemon juice ​

​1. Heat a pan over medium-high heat and add ½ tbsp (10ml) olive oil. Slice the veggie sausages and cook until browned. Remove from the pan and set aside. ​
2. Add rinsed lentils to lined airfryer basket, add 1 tsp (5ml) olive oil, salt & mix well. Bake for 30 minutes at 180°C.​
3. In a large bowl, assemble salad by adding spinach, crispy lentils, and sausages. ​
4. Mix all dressing ingredients together and drizzle over salad. ​
5. Top with sliced avocado and serve.​

Cook once, enjoy delicious, home-cooked lunches for a week!

YOU’LL NEED:​
2 packs Vegie Delights™ Vegie Sausages, sliced​
1 tbs olive oil​
1 brown onion, diced​
2 garlic cloves, minced​
1 tbs mild curry powder​
500g sweet potato, peeled and cubed​
400g can crushed tomatoes​
1 cup vegetable stock​
400mL can reduced‑fat coconut milk​
2 cups baby spinach​
salt and pepper, to taste​
steamed rice (optional)​
lime wedges (optional)​

METHOD
1. Heat olive oil in a large saucepan over medium heat.
2. Add onion and garlic and cook for 3–4 minutes, or until softened.
3. Add curry powder and cook for 1–2 minutes, or until fragrant.
4. Add sweet potato, crushed tomatoes and vegetable stock. Bring to a simmer.
5. Cook for 12–15 minutes, or until sweet potato is tender.
6. Stir in coconut milk and Vegie Delights Vegie Sausages. Simmer 10 minutes, or until heated through.
7. Add spinach and cook for 1–2 minutes, or until wilted.
8. Serve with rice and lime wedges.

Taco Tuesdays are our favourite kind of Tuesday, especially when they involve our Vegie Sausages, which mean dinner will be on the table in record time.

YOU’LL NEED:
1 pack Vegie Delightsâ„¢ Vegie Sausages, cut into quarters
6 soft tortillas
1 tbs olive oil
1 tsp smoked paprika
1/2 tsp ground cumin
1 cup shredded lettuce
1 tomato, diced
1/2 cup plain greek yoghurt (or plant‑based yoghurt alternative)
1 lime, cut into wedges
optional – cheese

METHOD:
Slice Vegie Delights Vegie Sausages and sprinkle with smoked paprika and cumin.
Heat olive oil in a large frypan over medium heat. Cook for 4–5 minutes, or until lightly browned and heated through.
Warm tortillas in microwave for 20–30 seconds, or until soft and pliable.
Assemble tacos with lettuce, tomato, yoghurt and sausage pieces.
Serve with lime wedges.

A centrepiece the whole family can enjoy this long weekend! Our Vegie Roast is plant-based, totally tasty and easy to incorporate into your favourite roast recipe. Here’s one of ours:

Maple Glazed Vegie Roast with Crispy Potatoes
1 Vegie Delights Vegie Roast
800g Baby potatoes, halved
2 Carrots, julienned
1 red onion, cut into wedges
2 Tbsp Olive Oil
Salt and pepper, to taste
Maple glaze
2 Tbsp Maple Syrup
1 Tbsp Dijon Mustard
1 tsp olive oil
1 tsp chopped fresh rosemary

Method
1. Preheat oven to 200C (fan-forced 180C).
2. Place potatoes, carrots, and onion on a large lined baking tray.
3. Drizzle with olive oil, season with salt and pepper, and toss to coat.
4. Place the Vegie Roast in the centre of the tray. Roast for 20 minutes.
5. In a small bowl, mix all glaze ingredients.
6. Remove tray from oven and brush the Vegie Roast with the maple glaze.
7. Return to the oven and cook for a further 20-25 minutes, turning vegetables halfway, until potatoes are golden and the roast is heated through.
8. Slice the roast and serve with the crispy vegetables.

All hail the tray bake! Pop our Vegie Sausages in the oven with your fave veg (or whatever’s languishing in the crisper), drizzle over mustard, olive oil, garlic and honey, and pat yourself on the back for getting dinner on the table in 20 minutes *applause emoji*

YOU’LL NEED:
1 pack Vegie Delightsâ„¢ Vegie Sausages, cut into quarters
2 white potatoes, cut into small cubes
4 broccolini stalks
1/2 red onion
2 tbs olive oil
2 tbs wholegrain mustard
1 tbs honey (or maple syrup for a vegan variation)
1 garlic clove, minced
salt and pepper, to taste

METHOD:
1. Preheat oven to 200°C (fan‑forced 180°C) and line a large baking tray with baking paper.
2. Place potatoes and onion on tray, drizzle with 1 tbs olive oil, season with salt and pepper and toss to coat. Roast for 15 minutes, or until starting to soften.
3. In a small bowl, mix remaining 1 tbs olive oil, wholegrain mustard, honey (or maple syrup) and garlic.
4. Remove tray from oven and add Vegie Delights Vegie Sausages and broccolini. Toss with mustard mixture.
5. Roast for a further 15 minutes, or until vegetables are tender and sausages are heated through.
6. Serve warm.
