Tuesday means taco cups! Packed with protein from our Vegie Sausages and black beans, these come together quickly for an easy mid-week meal and are perfect for meal prep too.
Serves 3
Tortilla cups
6 mini wholegrain tortillas
3 tbsp water
Filling
10ml olive oil
300g Vegie Delights Plant-Based Vegie Sausages
1 tin black beans, drained & rinsed
2 tbsp (30g) taco seasoning
1 tbsp water
Tomato salsa
2 tomatoes, diced
Handful coriander, chopped
Juice of ½–1 lime
1 tsp maple syrup
To serve
Avocado, sliced

METHOD
1.  Preheat the oven to 180°C.
2. Mix the flour and water together until smooth.
3. Cut 4 small slits (~2 cm) around each tortilla. Lightly brush with the flour mixture, then fold and press into cup shapes. Place into a greased muffin tray or baking dish.
4. Bake tortilla cups for 8–10 minutes until lightly golden and holding their shape.
5. Meanwhile, heat a pan over medium-high heat. Slice the veggie sausages and cook until browned.
6. Add black beans, taco seasoning & 1 tbsp of water. Combine well and cook for a few minutes until heated through.
7. In a bowl, combine all salsa ingredients and mix well.
8. Spoon the filling into the tortilla cups.
9. Top with fresh tomato salsa and avocado.
